I’m on a mission at the moment to use our slow cooker more. I work evenings and three nights every week the children have activities in the evenings too. This often means I’m in a rush to get food on the table and end up starting work a little frazzled! Using the slow cooker takes some of the stress out of the evenings. Last week, I attempted this slow cooker chicken curry recipe for the first time, it was a big hit and I’ll be adding it to our weekly meal planning on a regular basis now.

Slow Cooker Chicken Curry
- 500g chicken breast (diced)
- 2 medium onions (diced)
- 1 green pepper (diced)
- 450ml chicken stock
- 2 tablespoons tomato puree
- 2 cloves garlic
- 1 teaspoon turmeric
- 2 teaspoons cumin
- 2 tablespoons curry powder
- 1 tablespoon garam masala
- 1 teaspoon ground ginger
- 1 pinch cinammon
You’ll also need a slow cooker big enough to feed your family. We’ve had ours for a few years and after loads and loads of uses it’s still in pretty good nick! I’ve found some fab ones here.
Throw it all in! That’s it! If you’re using full chicken breasts like I did then you’ll need to dice them first.
I usually throw everything in early morning, cook on high for half an hour before turning it to low for the rest of the day, then it’ll be ready for us around 6 when we usually eat. You’ll need to check the instructions on your own slow cooker though but they’re all pretty similar.
Check it around half an hour before you want to eat and if it needs thickening you can remove the lid for that last bit. Otherwise, stir in some cornflour to thicken the sauce.

Now I was so looking forward to eating this after I’d been smelling it cooking all day that I forgot to take a picture of it on my plate! This was the leftovers still in the slow cooker. They were devoured by my husband in his second helping. It was yummy!
I served it with rice & naan bread and it really was delicious!
