I’m always on the look out for new recipes I can make from scratch. I love knowing that I’m providing a healthy and nutritious meal for all of the family and cooking from scratch with fresh ingredients means I know exactly what’s going into our bodies. One of our favourite family meals is chilli con carne. We love this cooked in the slow cooker and served with rice, sour cream, guacamole and nachos. It’s our idea of food heaven! I’ve always bought ready-made guacamole, and always felt a little guilty that it wasn’t the best choice, so when I saw this recipe using fresh and simple ingredients, I couldn’t resist giving it a try.
Cooking with a Food Processor
By far the quickest and easiest way to make guacamole is in a food processor. Until today, I was a complete novice with a food processor, I’d never used one and didn’t have a clue where to start! I’d borrowed a really fancy, complicated looking food processor from a friend as it’s something I’ve always wanted to experiment with. This is similar to the food processor I used, it’s a really high spec one, but there are loads of different options available to suit most budgets.
It took me a while to figure out how to use this, but a few google searches later I was all set.
As my first meal, I wanted to make something simple yet delicious. I browsed some food processor recipes and this guacamole recipe jumped out at me. It’s so simple and full of healthy, nutritious ingredients.
It’s jam packed full of fresh produce.
Tasty, ripe avocado.
Olive oil, lime juice, red onion, tomato, green chilli & crushed garlic.
Blitzed on the pulse setting in the food processor.
I let this chill in the fridge for a while before serving it up with nachos as a side dish for our chilli con carne. It went down a treat! All five of us loved it, even my super-fussy 8 year-old.
The guacamole tastes light and fresh. I also added a sprinkling of coriander to garnish. The recipe makes a good portion size so there’s plenty left over for us to snack on with breadsticks and salad sticks tomorrow. It will make the perfect after school snack. I’m really keen to try out more food processor recipes, there is something really satisfying about preparing food from scratch with fresh ingredients.
