Pinwheels with Hummus, Cucumber & Sun-Dried Tomatoes

Step 1: Warm the tortillas in the microwave between damp paper towels for 30 to 45 seconds, then set them aside.

Step 2: Lay one tortilla on a flat surface and add hummus, spinach, cucumbers, and sun-dried tomatoes in a layer.




Step 3: Roll the tortilla tightly, starting from one side.


Step 4: Slice into ½ to 1 inch pieces, then plate and serve.
