This Brie, Bacon & Apple Panini Is the Toasted Sandwich of Your Dreams
There’s just something about melty Brie and crispy bacon that feels a little bit fancy but also super comforting, you know? I whipped up this panini one afternoon when I had a couple slices of bacon leftover from breakfast and half an apple sitting in the fridge. Not gonna lie – I didn’t expect it to be this good. The combo of salty, sweet, and creamy totally hit the spot.
I love how quick this comes together, too. It’s one of those recipes that makes you feel like you put in way more effort than you actually did. You only need a few ingredients and like ten minutes, tops. If you’re anything like me and always looking for ways to jazz up a simple lunch, this panini is gonna be a keeper.
The honey drizzle is really what ties everything together. It’s subtle, but just enough to balance out the richness from the Brie and bacon. I’ve made this a few times now and honestly – I’m low-key obsessed. Give it a try next time you want something cozy and satisfying without a ton of work!

Ingredients
-
4 slices of your favorite bread – I usually go with sourdough or a hearty multigrain, but honestly, whatever you have on hand works great.
-
1/2 wheel of Brie cheese, sliced – Brie gets so perfectly melty and creamy – it’s what makes this panini feel a little extra special.
-
4 slices of bacon, cooked until desired crispiness has been reached – I like mine crispy for that salty crunch, but you do you!
-
1/2 apple, cored and thinly sliced – A tart apple like Granny Smith balances out the richness so well, but any kind will work in a pinch.
-
1 tbsp honey – Just a little drizzle brings everything together with that touch of sweet – don’t skip it!

Recipe Instructions
You can find a printable recipe card at the bottom of this post.
1. Take 2 slices of bread and divide the Brie cheese evenly between them.

2. Add a layer of thinly sliced apples on top of the cheese.

3. Place two slices of cooked bacon on top of the apple on each slice.

4. Drizzle honey over the bacon.

5. Top each sandwich with another slice of bread to close them.

6. Spread butter on the outside of each sandwich.
7. Heat a panini grill or skillet over medium heat.
8. Grill the sandwiches until the bread is golden brown and the Brie is melted, about 3–5 minutes.

9. Slice in half and enjoy while warm.

Top Tips
1. Don’t overload the sandwich.
It’s tempting to pile everything on, but keeping the layers even helps the Brie melt properly and makes grilling easier.
2. Use room-temperature Brie.
Let your Brie sit out for a few minutes before slicing – it spreads easier and melts more evenly this way.
3. Choose the right bread.
A sturdy bread like sourdough, ciabatta, or rustic country loaf holds up well and gives you that crisp, golden crust.
4. Cook bacon ahead of time.
This is a great way to use up leftover bacon from breakfast – or just cook extra because… bacon.
5. Add a touch of Dijon (optional!).
If you want a little extra zing, a thin swipe of Dijon mustard on the inside of the bread adds a nice sharp contrast.
6. Don’t rush the grill time.
Medium heat is key! Too hot and the bread burns before the cheese melts. Patience pays off here.
7. No panini press? No problem.
Use a regular skillet and press down the sandwich with another heavy pan or foil-wrapped brick – it works like a charm.

My Favorite Ways to Enjoy It
This panini is one of those sandwiches that feels just as perfect for a lazy weekend lunch as it does for a quick weekday dinner. I love pairing it with a warm bowl of tomato soup or a simple arugula salad with lemon vinaigrette – something fresh to balance out all that gooey goodness.
It’s also a hit when I make it for brunch with friends! I’ll slice them into halves or quarters and serve them on a big platter alongside fresh fruit and mimosas. Fancy without the fuss.
And honestly? Sometimes I make one just for me, curl up with a cozy blanket, and eat it while watching my favorite show. It’s total comfort food with a touch of something special.
