- 1 bell pepper (any color), cut into 1-inch pieces
- 1 zucchini, sliced into rounds
- 1 red onion, cut into wedges
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions:
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper. Add shrimp and vegetables, tossing to coat.
- Preheat the grill to medium-high heat. Thread shrimp and vegetables onto skewers, alternating between the two.
- Grill skewers for about 8-10 minutes, turning occasionally, until shrimp are cooked through and vegetables are tender.
- Serve immediately with extra lemon wedges if desired.
