Weekly Meal Plan No 12
It’s my first full week at home alone as a self-employed business owner. I haven’t really shared it much anywhere but I handed in my notice a little while back, and I’m now venturing into the world of being a full-time blogger. I’m really excited about it but it’s obviously a little nerve-wracking too! As well as My Money Cottage, I also run a number of other blogs too and having the time to work on them properly is wonderful.
As well as having more time to plough into my business, I’m also cooking far more from scratch now too, which is great for the finances and it’s also a great way to know exactly what the kids are eating too.
Here’s this week’s meal plan.
Monday – Sausage, mash, peas & gravy. You can’t beat this as the perfect comfort meal. I’ve always struggled to make good mashed potato, but I recently treated myself to a new £3 masher from ASDA and now my mash comes out perfectly every time!
Tuesday – Chicken kievs, chips & beans. A simple tea tonight, sometimes this kind of meal just hits the spot.
Wednesday – Spaghetti bolognese & garlic bread. This is always a winner. I’ll be making the sauce from scratch using a batch of tomato sauce I have in the freezer.
Thursday – Jacket potatoes/pizza. Thursday evening is usually swimming lesson time, so I always tend to plan quick and easy things my husband can throw in the oven. Jacket potatoes are one of my favourite meals, but unfortunately, none of the kids will eat them, so it’ll be a frozen pizza shared between them.
Friday – Freezer meal. Our freezers are really full at the moment so I’m gradually trying to use up what we have by concocting meals with whatever I find in there.
Saturday – Pizza night.
Sunday – Lasagne & salad
