Hearty Bagel Breakfasts on a Budget: Egg, Prosciutto & Garlic Butter Bake
Mornings in our house are always a bit of a whirlwind – especially when everyone’s hungry right now. I’ve been leaning into recipes that feel a little special but don’t take forever to make, and this bagel with egg, prosciutto, and garlic butter checks all the boxes. It’s warm, crispy, cheesy, and just fancy enough to make everyone feel like they’re getting something extra.
What I really love is how budget-friendly it is, even with the prosciutto. I just grab a small pack from the deli, and since you only need one slice per bagel, it stretches pretty far. Plus, everything else on the list is stuff we usually have on hand anyway. The garlic butter adds a flavorful punch without needing any extra sauces or spreads.
Sometimes I’ll even make a batch and wrap up a couple for the next morning. It reheats surprisingly well! And trust me, when you’ve got hungry kids and a busy day ahead, having breakfast basically done is a lifesaver.

Ingredients

4 bagels – I usually go for plain or everything bagels, but use whatever your crew loves most.

4 eggs – One egg per bagel makes this feel hearty and satisfying – perfect for a filling breakfast.

4 slices of cheddar cheese – The melty cheddar adds just the right creamy bite beneath all the savory layers.

4 slices of prosciutto – A little prosciutto goes a long way and gives this bagel that crispy, salty magic on top.

4 slices of your favorite Italian salami – I like to use a mild salami, but spicy works too if your family’s into it!

1 ½ tbsp salted butter – Salted butter adds flavor and makes the garlic herb spread extra rich.

1 garlic clove – Just one clove gives the butter a cozy, garlicky base without overpowering the whole thing.

½ tsp dried oregano – A dash of oregano brings in that classic Italian flavor we all know and love.

½ tsp chili paprika – This gives the butter a little warmth – feel free to use less if you’re feeding sensitive palates.

A few sprigs of fresh parsley – I chop up a few sprigs to blend into the butter and sprinkle over the top for a pop of green.

Salt, to taste – Just a pinch to bring everything together – you really don’t need much with the salty meats and cheese.

1. Preheat your oven to 375°F. You can also use a fan oven or an air fryer if preferred.
2. In a blender, combine the garlic, parsley, butter, oregano, chili paprika, and a pinch of salt. Blend until smooth and creamy.


3. Spread the garlic butter evenly over the top of each (no need to slice).

4. Layer each bagel with a slice of cheddar cheese, a slice of Italian salami, and a slice of prosciutto.



5. Carefully make a small hole in the center of the prosciutto on each bagel to hold the egg.
6. Crack an egg into each hole, allowing the egg white to spread slightly – it’s okay if some spills over.
7. Sprinkle each bagel with a bit of chili paprika and a pinch of salt.

8. Place the bagels on a baking sheet and bake for 13–16 minutes, or until the eggs are set and the prosciutto is crispy and golden.

9. Remove the bagels from the oven and let them cool for 2–4 minutes.
10. Garnish with freshly chopped parsley before serving.

Top Tips

Use parchment paper when baking to make cleanup easier – especially helpful if any egg white spills over.

Press down the center of the meat layers a bit before cracking in the egg to help it stay in place.
