Chill & Serve: No-Fuss Apricot Cheesecake Tart on a Budget
When summer hits and the kids are running in and out of the house all day, I lean into recipes that are low-effort and still crowd-pleasing. This apricot cheesecake tart has quickly become one of my favorite warm-weather desserts. It looks elegant on the plate, but it comes together with very little effort and no oven time. It’s the kind of dessert that feels special without requiring a lot of work.
Since we’re always keeping an eye on the grocery budget, I love that this recipe is affordable. With a few pantry staples, some fresh apricots, and a simple cream cheese filling, this tart brings creamy, fruity goodness to the table without costing much. I usually put it together in the morning while I sip my coffee, then let it chill in the fridge until after dinner. Simple, quick, and stress-free.
Whether you’re hosting friends or just want something sweet for your family on a regular weeknight, this no-bake apricot cheesecake tart checks all the boxes. It’s light, refreshing, and easy to make ahead. That means less time in the kitchen and more time enjoying the little things with the people you love.

Ingredients
-
1 lb fresh apricot plus 3 apricots for decoration: Choose ripe, in-season apricots for the best natural sweetness. Just a few extra slices on top make the whole tart feel a little fancy.
-
8 oz graham cracker crumbs: Store-bought crumbs save time, but you can also crush graham crackers at home if that’s what you have in the pantry.
-
½ cup unsalted butter: Melted butter binds the crust together and adds a rich, toasty flavor.
-
10 oz cream cheese: The creamy base of this tart. Softened cream cheese gives the filling a smooth texture and signature tang.
-
1 cup heavy cream: Whipping the cream adds lightness and lift to the filling without needing gelatin or baking.
-
1 cup powdered sugar: Adds sweetness and blends in easily for a silky-smooth texture.
-
1½ tbsp light brown sugar: A small amount adds depth and a gentle caramel note to the apricot topping.
-
1 tsp vanilla extract: A splash of vanilla brings warmth and rounds out the flavor.
-
2 pods of cardamom: Crushed cardamom pods give the apricots a gentle spice that adds a cozy, slightly exotic touch.
-
Two slices of lemon: Simmering lemon with the apricots brings brightness and balances the sweetness perfectly.

Recipe Instructions

1. In a blender, combine the graham cracker crumbs and unsalted butter. Blend until the crumbs are finely crushed and evenly coated with butter.

2. Pour the mixture into a tart pan, spreading it out evenly and pressing it down firmly with your hands.

3. In a small saucepan, add the peeled apricots, light brown sugar, cardamom, and lemon slices. Heat over medium heat, stirring occasionally, until the apricots soften and the sugar dissolves, about 15 minutes. If needed, add 2 tablespoons of water to help with the cooking.

4. While the apricot mixture cools, beat the cream cheese, heavy cream, and vanilla extract together in a bowl until soft peaks form.

5. Once the apricot mixture has cooled, blend it until smooth.

6. To assemble the tart, spread the cream cheese mixture evenly over the prepared crust.

7. Spoon the smooth apricot mixture on top, spreading it in the center and leaving a 2-inch border around the edges.

8. Thinly slice 3 apricots and arrange them on top for decoration.

9. Refrigerate the tart for 3-4 hours to set. For best results, let it chill for 24 hours before serving.
10. Serve and enjoy!

Top Tips
-
Chill for best results: While the tart sets after just a few hours in the fridge, letting it chill overnight gives it an even better texture and flavor.
-
Use ripe apricots: The riper the apricots, the sweeter and more flavorful your topping will be. Slightly soft with a deep orange hue is ideal.
-
Make the crust ahead: You can prep the graham cracker crust a day in advance and keep it covered in the fridge to save time.
-
Crush crackers by hand: If you don’t have a food processor, place graham crackers in a zip-top bag and roll over them with a rolling pin until fine.
-
Adjust sweetness: Taste the apricot mixture before blending and adjust the sugar to your liking if your apricots are extra tart or super sweet.
-
Don’t skip the cardamom: It may seem small, but this spice adds a lovely, subtle warmth that really complements the fruit.
-
Decorate just before serving: For the freshest look, slice and place the decorative apricots right before serving so they don’t dry out.

My Favorite Ways to Enjoy Apricot Cheesecake Tart
-
As a make-ahead dessert for summer gatherings: I love serving this chilled tart after a casual barbecue or potluck. It’s light, fruity, and always a hit.
-
Paired with a cup of tea in the afternoon: A small slice and a quiet moment make for the perfect mid-day treat.
-
Served with fresh berries on the side: A handful of raspberries or sliced strawberries adds extra color and a fresh pop of flavor.
-
Topped with whipped cream for a little extra indulgence: Just a dollop on top turns it into a dreamy, creamy dessert.
-
As a sweet finish to a weekend brunch: It holds up well in the fridge, so I’ll sometimes make it the night before and serve it alongside fruit and coffee in the morning.
-
Cut into mini squares for a party platter: It’s easy to slice into bite-sized pieces for showers or birthday gatherings.
