Equipment
-
6-quart crockpot: A larger slow cooker gives the casserole enough room to cook evenly without becoming too thick in the center.
-
Large mixing bowl: You’ll need plenty of space to whisk together the custard ingredients before pouring them over the bread.
-
Whisk: Helps combine the eggs, milk, cream, and seasonings into a smooth custard mixture.
-
Measuring cups and spoons: For accurately measuring the ingredients so the casserole has the right texture and sweetness.
-
Cooking spray: Keeps the casserole from sticking to the crockpot and makes cleanup much easier.
-
Silicone spatula or large spoon: Useful for gently pressing the bread into the custard and serving the casserole once it’s cooked.

Ingredients
-
French bread: Slightly stale French bread works best because it soaks up all the custard without falling apart.
-
Large eggs: Eggs create the rich custard that gives French toast its classic texture.
-
Whole milk: Adds creaminess and helps keep the casserole soft and tender.
-
Heavy cream: A little heavy cream makes the custard extra rich and flavorful.
-
Brown sugar: Adds sweetness along with a subtle caramel flavor throughout the casserole.
-
Granulated sugar: Helps balance the flavors and gives the custard just the right amount of sweetness.
-
Vanilla extract: Brings that warm bakery-style flavor that pairs perfectly with cinnamon.
-
Ground cinnamon: A must-have ingredient for that cozy French toast flavor.
-
Nutmeg: Just a small amount adds extra warmth and depth to the custard.
-
Salt: Helps balance the sweetness and brings out all the other flavors.
-
Butter, melted: Adds richness and helps create a soft, delicious texture.
Topping
-
Brown sugar: Melts into the top of the casserole and creates a sweet cinnamon-sugar finish.
-
Cinnamon: Adds an extra layer of warm spice right on top.
-
Butter, melted: Helps the topping come together and gives the casserole lightly golden edges as it cooks.

Breakfast sausage: Sausage links or patties help turn this into a more filling breakfast or brunch spread.

Whipped cream: Perfect for special occasions when you want breakfast to feel a little more indulgent.
-
Fresh fruit salad: A simple bowl of fruit helps balance the richness and adds plenty of color to the table.
-
Greek yogurt: A spoonful on the side adds a creamy, slightly tangy contrast to the sweetness.

Chopped pecans or walnuts: Sprinkle a handful on top just before serving for a little crunch.
-
Hot coffee or tea: The perfect way to round out a cozy breakfast, especially on chilly mornings.

Storing
-
Refrigerate leftovers: Store any leftover French toast casserole in an airtight container in the refrigerator for up to 3 days.

Thaw overnight: Transfer frozen portions to the refrigerator the night before you plan to eat them for the best texture.

Keep it covered: This helps prevent the casserole from drying out and keeps it tasting fresh.

Variations & Substitutions
-
Use brioche or challah: Both breads make a richer casserole and soak up the custard beautifully.
-
Add fresh berries: Blueberries, raspberries, or diced strawberries can be mixed in with the bread before cooking.
-
Try sliced bananas: Bananas add extra sweetness and pair perfectly with the cinnamon flavors.
-
Mix in chocolate chips: A handful of chocolate chips turns this into a fun breakfast treat that kids especially love.
-
Add nuts for crunch: Chopped pecans or walnuts add texture and a little extra flavor.
-
Swap the spices: Try adding a pinch of pumpkin pie spice or apple pie spice for a seasonal twist.
-
Use half-and-half instead of heavy cream: If that’s what you have on hand, it will still give you a rich, creamy custard.
-
Make it extra indulgent: Stir a few ounces of softened cream cheese into the bread mixture before cooking.
-
Add diced apples: Fresh apples work really well and give the casserole an apple-cinnamon flavor.
-
Reduce the sweetness: Cut back slightly on the sugar if you prefer a less sweet breakfast and plan to serve it with syrup.
-
Use a different topping: Try chopped nuts, a streusel topping, or even a handful of shredded coconut before cooking.
-
Add raisins or dried cranberries: These bring a little chewiness and extra sweetness to every bite.

FAQs
Can I make crockpot French toast casserole the night before?
Yes! This is one of the best make-ahead breakfast recipes. Assemble everything the night before, cover the crockpot insert, and refrigerate it overnight. In the morning, place the insert into the slow cooker and cook as directed.
What is the best bread for crockpot French toast casserole?
French bread is a great choice because it holds its shape while soaking up the custard. Brioche and challah also work well if you'd like a richer, slightly sweeter casserole.
Can I cook French toast casserole in a crockpot instead of the oven?
Absolutely. Using a crockpot is an easy way to make French toast casserole without turning on the oven. It cooks slowly and evenly, creating a soft center with lightly golden edges.
How long does crockpot French toast casserole take to cook?
Most crockpot French toast casseroles take about 3 to 4 hours on low. Cooking times can vary slightly depending on your slow cooker, so start checking for doneness around the 3-hour mark.
How do I know when crockpot French toast casserole is done?
The center should be set and no longer look wet or runny. A knife inserted into the middle should come out mostly clean, and the edges should be lightly golden.
Can I freeze French toast casserole?
Yes. Let the casserole cool completely, then portion it into freezer-safe containers. Freeze for up to 2 months and thaw overnight in the refrigerator before reheating.
Why is my French toast casserole soggy?
A soggy casserole is usually caused by undercooking or using very fresh bread that hasn't had time to dry out. Slightly stale bread absorbs the custard better and gives the casserole a better texture.
Can I add fruit to crockpot French toast casserole?
Yes. Blueberries, strawberries, raspberries, diced apples, and sliced bananas all work well. Simply mix the fruit in with the bread before adding the custard.
Can I use a different type of milk?
Yes. Whole milk gives the richest flavor, but you can use 2% milk, half-and-half, or even dairy-free alternatives such as almond milk or oat milk.
What toppings go well with crockpot French toast casserole?
Maple syrup, powdered sugar, whipped cream, fresh berries, chopped pecans, walnuts, caramel sauce, and cream cheese glaze are all delicious options.
