There’s something about a quick, fresh salad that just hits the spot – especially when time (and groceries) are running low. I made this simple avocado salad the other day when I realized we had a few ripe avocados sitting on the counter and not much else in the fridge. It turned out so good, I knew I had to share it here. It’s the kind of recipe that makes you feel like you put in effort, even when you didn’t really have the time.

What I love most about this salad – besides how tasty it is – is that it doesn’t cost much to throw together. With just a handful of ingredients (most of which we usually have on hand anyway), it’s become a repeat lunch around here. The kids even liked it, which honestly surprised me because they’re not always fans of raw veggies. I think the creamy avocado helps win them over!

You can serve it on it’s own, scoop it up with tortilla chips, or even toss it into a wrap. However you eat it, it’s a great way to stretch your grocery budget without sacrificing flavor. And hey, if it keeps me from tossing overripe avocados in the compost bin, even better!

Ingredients

  • 2 avocados – I like to use ripe but still slightly firm avocados so they hold their shape when mixed.

  • 1 lb. cherry tomatoes – These add a burst of sweetness and color – halving them helps the flavors blend better.

  • 1 English cucumber – I prefer English cucumbers because they’re seedless and have a nice crunch.

  • ½ red onion – Just half is enough to give the salad a sharp bite without overpowering everything.

  • 1 lemon, juiced – Fresh lemon juice brightens up the whole dish and helps keep the avocados from browning too fast.

  • 1 tbsp olive oil – A little olive oil ties everything together without making it too heavy.

  • Salt, to taste – Start small and taste as you go – avocados and cucumbers can soak up a good bit of salt.

  • Black pepper, to taste – A few grinds of black pepper adds just the right amount of kick.

1. Wash all the produce.

2. Cut the cucumber into quarters lengthwise, then dice it and add to a bowl.

3. Halve the cherry tomatoes and add them to the bowl.

4. Peel and dice the avocados, then add them to the bowl.

5. Thinly slice the red onions and add them to the bowl.

6. Juice the lemon and sprinkle the juice over the ingredients.

7. Add the olive oil to the bowl.

8. Season with salt and pepper to taste.

9. Toss everything together until well combined.

10. Chill before serving.

Top Tips

  • Use ripe avocados – but not mushy. Gently squeeze them; they should give slightly under pressure. Too soft and they’ll turn into guac when you mix everything.

  • Chill your veggies before prepping. If you’ve got time, pop your tomatoes and cucumber in the fridge first – it makes the salad extra refreshing.

  • Cut the onion thin. Slicing it nice and thin helps it blend better into the salad and keeps the flavor from being too strong.

  • Add the lemon juice right away. As soon as you cut the avocado, toss it with lemon juice to keep it from browning too fast.

  • Make it ahead – sort of. You can prep everything except the avocado a few hours early. Add the avocado and dressing right before serving for best texture.

  • Customize it. Toss in some feta, chopped fresh herbs (like parsley or dill), or even a handful of chickpeas to bulk it up a bit.
