Hot French Onion Beef Sliders with Au Jus for Dipping

If you’re a fan of French onion soup or a classic roast beef sandwich, you’re going to love these Hot French Onion Beef Sliders. They’ve got everything I adore about cozy comfort food: warm, buttery rolls, layers of melty cheese, tender roast beef, and that irresistible onion flavor that ties it all together. They bake up golden and bubbly, and the smell alone is enough to get everyone wandering into the kitchen.

These sliders are the kind of recipe that feels fancy enough for guests but easy enough for a weeknight dinner. I love making them for game days, holiday parties, or even just a lazy Sunday lunch when I want something hearty without spending hours in the kitchen. The French fried onions give the perfect crunch, and that cheesy roast beef combination hits all the right notes.

And let’s talk about the au jus for dipping. It takes these little sandwiches to a whole new level. That savory, rich dip makes every bite extra satisfying. I like to serve them right out of the oven with a small bowl of warm au jus on the side, and there’s never a single one left. They’re the kind of sliders that make everyone ask for the recipe before they even finish eating.

Ingredients

  • 1 pack (12-count) of Hawaiian rolls or slider rolls of choice: I love using Hawaiian rolls because they’re soft, buttery, and add just the right hint of sweetness.

  • 1 lb deli sliced roast beef (or more!): Pile it on thick if you want extra meaty sliders, I always do.

  • 10-12 slices Swiss or provolone cheese (or half/half of both), divided: The mix of Swiss and provolone gives that perfect balance of creamy melt and mild flavor.

  • 1 cup French fried onions: These add the best crunchy onion flavor that makes every bite irresistible.

  • 4 tbsp butter: Melted butter brushed over the tops makes the rolls golden, rich, and perfectly crisp.

  • 1 packet (1 oz) au jus gravy mix: This is what gives you that warm, savory dip that ties everything together.

  • ½ tsp garlic powder: A little garlic powder adds a cozy, savory depth to the buttery topping.

  • ½ tsp onion powder: I love how the onion powder boosts that French onion flavor even more.

  • ½ tsp sesame seeds for garnish (optional): The sesame seeds give a little extra texture and make the sliders look so inviting.

  • Fresh parsley or fresh thyme for garnish (optional): A sprinkle of fresh herbs adds a pop of color and makes them look party-ready.

Recipe Instructions

You can find a printable recipe card at the bottom of this post.

1. Preheat the oven to 350℉.

2. Lightly grease a 13×9 baking dish with cooking spray, or line it with parchment paper or nonstick foil.

3. Remove the Hawaiian rolls from the package, keeping them attached as one block. Carefully slice the rolls in half horizontally to separate the top layer from the bottom.

4. Place the bottom layer of rolls into the prepared pan.

5. Lay half of the cheese slices evenly over the bottom layer, covering the surface.

6. Evenly spread the deli-sliced roast beef on top of the cheese.

7. Sprinkle French fried onions across the beef layer.

8. Add the remaining cheese slices over the onions, covering the entire surface.

9. Place the top half of the rolls on top to complete the sliders.

10. In a microwave-safe bowl, melt the butter.

11. Measure out 1 tablespoon from the au jus gravy mix packet.

12. Stir the 1 tablespoon au jus mix, garlic powder, and onion powder into the melted butter until well combined.

13. Brush the butter mixture evenly over the tops of the rolls.

14. If desired, sprinkle sesame seeds on top.

15. Bake uncovered for 15–20 minutes, until the tops are golden brown and crisp, and the cheese is melted.

16. While the sliders bake, prepare the remaining au jus according to the packet directions for dipping. Removing 1 tablespoon won’t affect the flavor.

17. Once the sliders are done, garnish with fresh parsley or thyme if you like.

18. Serve warm with au jus on the side for dipping.

Serving & Storing

  • I like to serve these straight out of the oven while the cheese is still gooey and the tops are golden and crisp.

  • A warm bowl of au jus on the side is a must for dipping, and it makes every bite so flavorful.

  • These sliders are perfect for parties, game days, or even a cozy dinner with a simple side salad.

  • If you’re feeding a crowd, you can easily double the recipe and bake two pans at once.

  • Leftovers reheat beautifully in the oven at 350°F for about 10 minutes until warmed through.

  • You can also store any extras in an airtight container in the fridge for up to 3 days.

  • I don’t recommend freezing them once baked, but you can assemble them ahead of time and bake just before serving.

Variations

  • Cheese Swap: Try mozzarella or cheddar for a different flavor twist. Pepper jack adds a little kick if you like some spice.

  • Caramelized Onions: Replace the French fried onions with homemade caramelized onions for a richer, melt-in-your-mouth flavor.

  • Horseradish Sauce: Spread a thin layer of creamy horseradish sauce on the rolls for a tangy bite.

  • Mushroom Melt: Add sautéed mushrooms to the roast beef layer for an earthy, hearty variation.

  • BBQ Style: Swap the au jus mix for your favorite BBQ sauce and skip the dipping.

  • Turkey Version: Use deli-sliced turkey instead of roast beef for a lighter take that’s still just as delicious.

  • Mini Philly Style: Add green peppers and onions for a mini Philly cheesesteak vibe.

  • Everything Bagel Topping: Sprinkle everything bagel seasoning on top instead of sesame seeds for extra flavor.

Substitutions

  • Rolls: If you don’t have Hawaiian rolls, any soft slider buns or dinner rolls will work just as well.

  • Roast Beef: Leftover roast beef or thinly sliced steak can easily replace deli-style beef.

  • Cheese: Use any melting cheese you love. Provolone, mozzarella, or even white American all melt beautifully.

  • French Fried Onions: Crispy shallots or even a handful of sautéed onions make a great stand-in.

  • Butter: You can use olive oil or melted margarine if you’re out of butter.

  • Au Jus Mix: If you don’t have a packet, make a quick dip with beef broth, Worcestershire sauce, and a pinch of garlic powder.

  • Garlic and Onion Powder: Substitute with minced garlic and finely chopped onion for a fresher flavor.

  • Sesame Seeds: Poppy seeds or a sprinkle of everything bagel seasoning work perfectly in their place.

  • Fresh Herbs: Dried parsley or thyme can be used if fresh isn’t available.

FAQs

Can I make these sliders ahead of time?
Yes, you can assemble the sliders a few hours in advance, cover the pan with foil, and refrigerate them until you’re ready to bake. Just add a few extra minutes of baking time if they’re cold from the fridge.

Can I use a different type of meat?
Absolutely. Turkey, ham, or even shredded chicken all work well. The key is keeping the meat thinly sliced so the sliders stay easy to eat.

What’s the best way to reheat leftovers?
I like to reheat them in the oven at 350°F for about 10 minutes. This keeps the rolls crisp on top and the cheese nice and melty.

Do I have to use au jus mix for dipping?
Not at all. You can use beef broth mixed with a splash of Worcestershire sauce if you don’t have au jus mix on hand.

Can I freeze these sliders?
It’s best to freeze them unbaked. Assemble the sliders, wrap them tightly, and freeze for up to a month. When you’re ready, thaw in the fridge overnight and bake as usual.

Can I make these vegetarian?
Yes! Swap the roast beef for sautéed mushrooms and onions, and use vegetable broth for dipping. They’re still just as cheesy and flavorful.
