Weekly meal plan

Last week seemed to last forever! The kids were back at school and I’d planned on getting so much done, but in reality I actually spent most of the week trying to get rid of a migraine and then a lingering headache. I’ve been suffering with migraines for pretty much all of my adult life. I have medication that does usually work, but it leaves me feeling pretty rubbish even though it shifts the worst of the migraine, so the week wasn’t as productive as I’d hoped it would be.

This week, I’m hoping to catch up and be far more productive. I’m aiming to stick to a healthy diet with plenty of fruit, lots of water and hopefully some decent nights’ sleep too – this is something I really struggle with!

Monday – Chicken fajitas, rice & salad. I’ve got some chicken breasts already cooked so I just need to warm these up, fry some peppers and onions (in fry light to keep it healthy) then cook up some rice and throw a salad together. The younger two will probably just have grated cheese and a bit of salad on their wraps.

Tuesday – Lasagne & garlic bread. I’m going to double up the meat so that I can save half for Wednesday’s chilli. I’ll make both the tomato and cheese sauces from scratch, the tomato sauce will be full of hidden veg.

Wednesday – Chilli & rice. The younger two will probably have theirs with pasta as they can be a bit funny with rice! I’ll use the remaining meat from Tuesday and add in some kidney beans and chilli powder to give it a kick.

Thursday – We usually end up with Jacket Potatoes on Thursdays as one of us can shove them in oven whilst the other takes Connor to his swimming lesson. It’s probably my favourite meal of the week, healthy, easy and tastes delicious. I really think Jacket Potatoes are underrated.

Friday – Ready-made chicken pie from ASDA. I know it’s better to make your own but by Friday I just want something I can bung in the oven!

  2. Migraines are the worst. I used to suffer badly as a teenager. I hope you are feeling better now.
    Great meal plan. You have a lot of our favourites. I feel exactly the same when it gets to a Friday. Anything I can just bung in the oven works x
