  3. Secure the lid and set the valve to Sealing. Cook on High Pressure for 4 minutes.

  4. Once the cooking time is done, carefully turn the valve to Venting for a quick release. Open the lid once the pressure has fully released.

  5. Stir the soup and let it rest for 3–5 minutes to thicken slightly. Remove the bones and shred any loose meat back into the pot before serving.

4. Thai Coconut Chicken Soup (Tom Kha Gai)

  4. Increase the heat to medium-high and pour in the white wine to deglaze the pot, scraping up any browned bits with a wooden spoon. Let the wine reduce by half, which should take around 5 minutes.

  5. Add the beef stock, bay leaves, and thyme. Season with salt and pepper. Bring the soup to a simmer, then lower the heat and let it gently simmer for 30 minutes to allow the flavors to develop. Remove the bay leaves before serving.

  6. Preheat the broiler. Arrange the baguette slices on a baking sheet, sprinkle grated cheese over the top, and broil for 2–3 minutes until the cheese is bubbly and golden. Keep a close eye on them to prevent burning.

  7. Carefully place the cheesy baguette slices on top of the soup in each bowl and serve immediately.
