  2. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
  3. Divide the dough evenly into two portions. Add red gel food coloring to one half and blue gel food coloring to the other, mixing each until the color is fully blended.
  4. Scoop about 1 tablespoon of dough at a time and roll into small balls. Coat each ball generously in powdered sugar, then gently flatten them into thick discs.
  5. Arrange the cookie discs on a tray or plate and freeze for at least 1 hour, or until completely firm. This helps create the crinkle effect and keeps the cookies from spreading too much.
  6. When you’re ready to bake, preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Instructions:

  1. Preheat the oven to 350°F (180°C) and line a muffin pan with paper liners.
  2. In a medium bowl, stir together the crushed cookies, granulated sugar, and melted butter until the mixture looks like damp sand.
  3. Spoon the crumb mixture into the muffin liners and press it down firmly to create an even crust.
  4. Bake for 5–6 minutes, just until the crusts begin to set. Remove from the oven and allow them to cool completely.
  5. In a large bowl, beat the cream cheese with the remaining sugar until smooth and creamy.
  6. Divide the cheesecake filling evenly into three bowls.
  7. Leave one bowl plain. Add red gel food coloring to one bowl and blue gel food coloring to the other, stirring each until the color is fully blended.
