25 Chicken Soup Recipes That Are Pure Comfort in a Bowl

As soon as the weather starts getting colder, soup seems to find its way back onto our dinner menu. There’s something so nice about having a big pot of it bubbling away, especially when it’s dark outside ridiculously early and nobody really knows what they fancy for dinner. Give me a bowl of something warm and a chunk of bread to dunk in it and I’m happy.

Chicken soup is always one I come back to, but I definitely don’t want the same chicken noodle soup every week. Sometimes I want something really creamy and filling, other times something a bit lighter, and then there are days when I fancy something with a bit more spice or completely different flavors. Luckily, there are about a million ways to turn chicken into a really good bowl of soup.

So I’ve gathered 25 of my favorite chicken soup recipes together in one place. There are noodles, rice, dumplings, creamy soups, spicy soups and a few slightly different ones that I probably wouldn’t have thought to make myself. Basically, plenty to keep us going through soup season without eating the same thing over and over again.

5. Thai Coconut Chicken Soup

This is a lovely one for when you fancy something a bit different. The coconut milk makes it creamy without being too heavy, with loads of flavor and just the right amount of warmth.

Servings: 2-3

Ingredients:

  • 1⅔ cups coconut milk (400 ml)
  • 10 oz chicken breast, diced (300 g)
  • ½ tablespoon green curry paste
  • 1-inch piece of fresh ginger, thinly sliced (2–3 cm)
  • 1½ cups sliced mushrooms (200 g)
  • 2 tablespoons lime juice (30 ml)
  • 1 stalk lemongrass, optional
  • Salt, to taste
  • Optional garnish: chopped fresh cilantro or lime wedges

Instructions:

  1. Cut the chicken breast into small bite-sized pieces and set them aside.

  2. In a medium pot, pour in the coconut milk and ¾ cup (200 ml) of water.

  3. Add the green curry paste and sliced ginger, then bring the mixture to a gentle boil over medium heat while stirring to dissolve the paste.

  4. Stir in the chicken pieces and mushrooms, then let the soup simmer for about 10 minutes until the chicken is cooked through and the mushrooms are tender.

  5. Mix in the lime juice and add salt to taste, removing the lemongrass stalk if you used one.

  6. Ladle the hot soup into bowls, garnish with fresh cilantro or lime wedges, and serve right away.
