My slow cooker is probably my favorite piece of kitchen equipment. I use it at least three times per week. It makes life so much easier on days when I know I’m going to be short on time for cooking dinner.
I love to cook with chicken, it’s so versatile and everyone will actually eat it in our house! If you’ve got picky kids then you know how much of a win that is.
I’ve put together this list of over 30 crockpot chicken breast recipes to give you plenty of easy dinner inspiration. There’s a good mix of creamy pasta dishes, cozy comfort food, lighter meals, and family favorites.

Ingredients:
- 3 large boneless skinless chicken breasts
- 1 packet taco seasoning
- 1 (15.25 oz) can of corn, drained
- 1 cup salsa
Instructions:
- Place the chicken breasts into the slow cooker and sprinkle the taco seasoning evenly over the top.
- Add the corn, then pour the salsa over everything to coat the chicken.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender.
- Shred or slice the chicken and use it for burritos, tacos, nachos, or any of your favorite Mexican-style meals.

Ingredients:
- 2 lbs boneless, skinless chicken breasts
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup chicken broth
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 cups fresh broccoli florets (or 1 (12 oz) bag frozen, thawed)
Instructions:

Lightly coat the slow cooker with nonstick spray.

Place the chicken breasts in the bottom of the slow cooker.

In a medium bowl, whisk together the cream of chicken soup, sour cream, cheese, broth, garlic powder, onion powder, salt, and pepper. Pour the mixture over the chicken.

Cover and cook on Low for 4–6 hours, or until the chicken is tender and fully cooked.

During the last 30 minutes of cooking, stir in the broccoli.

Shred or dice the chicken, stir everything together, and serve warm.

If you love stir-fries but want dinner done when you get in then this is the perfect alternative. It’s so easy and it tastes amazing too.
Servings: 6
Ingredients:
- 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 2 carrots, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 1 tbsp sesame oil
- 1 tsp ground ginger
- 2 tbsp cornstarch
- 2 tbsp water
Instructions:
- Add the chicken, onion, carrots, garlic, soy sauce, honey, sesame oil, and ginger to your crockpot. Stir to combine.
- Cover and cook on Low for 4-5 hours or High for 2-3 hours.
- During the last 30 minutes of cooking, add the broccoli and red pepper.
- In a small bowl, whisk together the cornstarch and water to create a slurry.
- Stir the slurry into the crockpot and cook for a further 20-30 minutes until the sauce has thickened.
- Serve hot over cooked rice or noodles.
