Budget Bakery at Home: Easy, Fail-Proof Croissants That Impress

There’s just something about the smell of fresh croissants baking that makes our whole house feel like a cozy little café. I used to think making them at home would be way too complicated or require a pastry degree or something – turns out, I was totally wrong. These homemade croissants are actually super simple and don’t need any fancy ingredients. Just a little time and patience (and maybe a quiet moment without kids climbing the counters).

Honestly, I started making these as a way to save a few bucks. The bakery croissants we love so much were starting to add up fast, and with three always-hungry kiddos around, I figured I had to try something. Now I whip these up whenever we want a special treat without the splurge. And the best part? They taste just as good (if not better, if I’m being honest) than store bought ones.

If you’ve never made croissants from scratch, don’t worry – this recipe is totally fail-proof. I’ve had mornings where I barely measure right or forget to set the timer and they still turn out delicious. So don’t stress too much about being perfect. Just roll with it (literally), and you’ll have warm, buttery croissants on your table in no time.

Ingredients

  • 2 cups all-purpose flour – This is our base – simple, affordable, and always in my pantry.
  • 1 packet (2 1/4 tsp) instant yeast – Instant yeast keeps things easy and gives the dough a beautiful rise without too much fuss.
  • 1/4 cup granulated sugar – Just enough sweetness to balance out the buttery layers.
  • 1/2 tsp salt – A pinch of salt brings all the flavors together – don’t skip it!
  • 3/4 cup warm milk – I like to warm it just slightly – think cozy, not hot, so it doesn’t mess with the yeast.
  • 1/2 cup unsalted butter, softened – This is what gives the croissants their signature flakiness – worth every swipe of the rolling pin.
  • 1 egg, beaten (for egg wash) – This little step makes a big difference – shiny, golden tops that look straight out of a bakery.

Recipe Instructions

You can find a printable recipe card at the bottom of this post.

1. In a large bowl, mix together the flour, instant yeast, sugar, and salt.

2. Gradually add the warm milk to the dry ingredients, stirring until a dough forms.

3. Transfer the dough to a floured surface and knead for about 5 minutes until smooth.

4. Roll out the dough into a rectangle about 1/4 inch thick.

5. Spread the softened butter evenly over the surface of the dough.

6. Fold the dough into thirds, like a letter, then turn it 90 degrees and roll it out again into a rectangle.

7. Repeat the folding process two more times.

8. Wrap the dough in plastic wrap and refrigerate for 1 hour.

9. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

10. Roll out the chilled dough into a large rectangle and cut it into triangles.

11. Roll each triangle from the wide end toward the tip to form croissants.

12. Place the croissants on the prepared baking sheet, leaving space between each one.

13. Brush the tops with beaten egg for a shiny finish.

14. Bake for 12–15 minutes or until golden brown.

15. Allow the croissants to cool slightly before serving. Enjoy your easy homemade croissants!

Top Tips

1. Don’t stress over perfect folds.
Croissants are all about layers, but they don’t have to look bakery-perfect to taste amazing. Even a slightly wonky roll still bakes up golden and flaky.

2. Chill the dough – but not too long.
That hour in the fridge helps the butter firm up, but if you forget it in there (been there!), just let it sit on the counter for 10–15 minutes before rolling again.

3. Use what you have.
No pastry brush for the egg wash? A spoon or your fingers works in a pinch. Softened butter from the microwave? Totally fine – just don’t melt it fully.

4. Make it a weekend project.
I like to prep the dough during a quiet moment (nap time, anyone?), then bake them fresh in the morning for a cozy, budget-friendly breakfast.

5. Freeze for later!
You can freeze the shaped croissants before baking. Just pop them in the oven straight from the freezer – add a few extra minutes to the baking time and you’re set.

6. Let the kids help roll.
Sure, the shapes get a little silly, but it’s a fun way to get everyone involved – and honestly, no one complains when there’s croissants on the table.

My Favorite Ways to Enjoy It

1. Fresh outta the oven with jam
There’s nothing better than a warm croissant slathered with strawberry or raspberry jam – simple and so satisfying.

2. Croissant breakfast sandwiches
Slice one in half and fill it with scrambled eggs, cheese, and a slice of ham or turkey. Total brunch vibes, without the café price.

3. Kid-friendly chocolate drizzle
Melt a few chocolate chips and drizzle over the top for a fun little dessert twist the kids go wild for.

4. Mini croissant picnic sliders
Cut them open and stuff with turkey, lettuce, and a swipe of mayo for the cutest little lunch sliders – perfect for backyard picnics or lunchboxes.

5. Toasted with honey butter
A quick toast and a swipe of honey butter turns yesterday’s croissant into today’s cozy treat. So good with tea!

6. Croissant French toast
If you’ve got extras, dip them in a quick egg-milk-cinnamon mix and cook like French toast. It’s ridiculously good and feels way fancier than it is.
