A Week of Budget-Friendly Meals for Under $50
Feeding a family on a budget? Same here. Between school lunches, after-school snacks, and somehow always running out of milk again, it can feel like the grocery bill never stops climbing. But I’m here to tell you – it is possible to plan a week of meals for under $50. Yep, even with hungry kiddos and picky eaters in the mix.
This isn’t about fancy ingredients or ten-stop grocery runs. Just simple, satisfying meals that stretch your dollar and fill those tummies. I’ve pulled together a full week of dinners that work hard for your budget, and many of them make enough for leftovers (which is basically a win in my book).
🛒 Grocery List Basics
Here’s the rough list I used. I shopped at Aldi and grabbed most of what I needed for right around $47. Prices may vary a bit depending on where you live, but the general idea holds up strong!

🍽️ The $50 Meal Plan
Monday: One-Pot Pasta with Veggies
Boil pasta, toss in frozen mixed veggies and marinara sauce. Add a sprinkle of cheddar on top if you like it cheesy (my kids always do).
Tuesday: Sheet Pan Chicken Thighs & Potatoes
Season those chicken thighs, roast with chopped potatoes and broccoli. Toss everything with a little oil, garlic, and seasoning. So easy, and barely any cleanup.
Wednesday: Black Bean & Rice Bowls
Cook rice, warm up black beans and corn. Sauté some onion and bell pepper if you’ve got the time. Top with a little shredded cheese and hot sauce if you’re feeling fancy.
Thursday: Tuna Patties & Roasted Veggies
Mix canned tuna with egg, breadcrumbs (or crushed crackers), and seasoning. Pan-fry until golden. Serve with roasted veggies or potatoes from earlier in the week.
Friday: Homemade Egg Fried Rice
Use up leftover rice! Scramble eggs, toss with rice, frozen veggies, and a splash of soy sauce. Quick and better than takeout if you ask me.
Saturday: Breakfast for Dinner
Scrambled eggs, toast, and roasted potatoes. Sometimes I even do pancakes if I have a little flour and milk left. The kids love it.
Sunday: Cheesy Potato Bake & Side Salad
Slice potatoes thin, layer with cheese, a little onion, and bake until bubbly. If you’ve got a bit of lettuce or spinach left, make a quick salad on the side to balance it out.
💡 Tips to Make It Stretch

Cook once, eat twice. That rice from Tuesday? It’s also your base for Friday.

Get scrappy with leftovers. A bit of leftover chicken goes great in a quesadilla or thrown into soup.

Freeze extras. If you don’t think you’ll use something right away, freeze it so it doesn’t go to waste.
