Weekly Meal Plan No 6
Well, what a difference a week makes! This time last week I never would have imagined the situation we’d find ourselves in now. But, we’ve got to keep going, be proactive and do all that we can to stay positive.
Things are really uncertain for me at the moment, as I’m sure they are for many of us. There are all kinds of worries and I’m sleeping even less than usual. It’s at times like these that I especially crave my routine, and meal planning does form a big part of that.
I always get my shopping delivered, but this week a fair chunk of what I’d ordered didn’t turn up. Some items I was aware of thanks to Asda’s email, but others just didn’t show up yet I was still charged for them! I’ve requested refunds for those. This has meant that I’ve had to juggle the food plan a little. I’m also trying to cut back a little just in case things get worse before they get better, so I’ll be planning more frugal meals over the coming weeks.
Monday – Chicken enchiladas, mexican rice and salad. A firm favourite for Monday nights at the moment!
Tuesday – A fake fry up. I’ll be grilling chipolata sausages, bacon, and tomatoes and I’ll fry some eggs for those that like them in a little fry light spray. I’ll also do some beans and some toast too. Proper comfort food done a little healthier than a traditional fry up!
Wednesday – Connor’s 5th birthday! Our plans for his birthday have fallen through. He loves McDonalds though and sees it as a real treat. I’m not 100% sure whether we will go, I don’t feel as though I can commit to anything at the moment, so if not we’ll have a little celebration at home.
Thursday – Jacket potatoes with tuna/cheese and salad.
Friday – Diet Fanta Chicken. I’m REALLY looking forward to this! This is a recipe created by my friend Ruth at Slimming Violet. It’s meant to taste like Sweet & Sour which we all love, so I can’t wait to give it a go!
Saturday – The usual pizza night!
Sunday – It should have been Connor’s party on Sunday, but it doesn’t look like that will go ahead. We did have a little get together with his Nana and Grandad last Sunday but we’ll play this one by ear!


Such a shame your plans are on hold, but I’m sure you’ll make the best of it.
I like the sound of the diet fanta chicken, I’ll have to give that a try. I do love sweet and sour.
