Weekly Meal Plan No 5

This week it’s Cheltenham Festival 2020, and working in the Matched Betting world means that it’s going to be a pretty busy week for me! I’ve taken on extra overtime all week so I’ll be working 9-3 and then again 6-8. This means I won’t have anywhere near as much time as I usually would to prepare meals during the week. In an ideal world, I would have batch cooked and frozen meals, but after last week’s migraine I’ve been battling with a cold this weekend, so cooking was the last thing I wanted to be doing. So, it’s mostly really easy, simple meals for us this week that everyone will actually eat.
Monday – Chicken Enchiladas & rice. I’ll be using up the leftover chicken from our Sunday dinner making this a really quick and easy meal. I’ll fry some onions and peppers to go in the enchiladas using fry light spray and serve it up with some salad too.
Tuesday – Veggie burgers, fries & salad. We’re not vegetarian, but we do all love veggie burgers! They’re so much better for you and far easier to cook as they don’t leave a load of fat all over the grill!
Wednesday – Spag bol. I’ve got some mince and some homemade tomato sauce in the freezer. I’ll defrost them overnight then throw them together into the slow cooker on Wednesday morning. Then there’s just the spaghetti & garlic bread to cook on Wednesday evening. I’ll serve with some grated cheese – it’s always a winner!
Thursday – Jacket spuds. It’s become a bit of a habit for us to have jacket potatoes on a Thursday, but they’re one of my favourite meals and they’re so versatile!
Friday – Sausages, mash & beans. Another really simple meal that fills everyone up!
Saturday – Pizza & salad.
Sunday – Party food. Connor will be five and he’s having two family parties this year due to the in-laws having something on the following weekend. I’m just going to do some buffet, picky food.
