2. Shape the mixture into 4 patties and place them on a parchment-lined baking sheet. Freeze for about 30 minutes to help them firm up.

3. Heat oil in a large, deep skillet to 375°F.

4. In a separate bowl, whisk together the flour, cornstarch, remaining salt, remaining paprika, and black pepper.

5. Lightly coat each patty in the flour mixture, then set them aside.

6. Pour the club soda into the remaining flour mixture and whisk until smooth to form a batter.

7. Dip each patty into the batter, making sure it’s fully coated, and carefully lower it into the hot oil.

8. Fry for 5–6 minutes per batch, flipping as needed, until golden brown and cooked through.

9. Transfer the patties to a wire rack to drain excess oil.
