Creamy Mussel Pasta Salad with Lemon Dressing
I absolutely love mussels, but I usually end up eating them the same way with plenty of crusty bread on the side. This mussel pasta salad is something a little bit different, and it’s such a lovely way to use them.
The creamy lemon dressing works really well with the mussels without overpowering them, and you’ve got juicy tomatoes, edamame and plenty of fresh parsley in there too. It feels really fresh but there’s enough pasta to make it filling.
I especially like this one when the weather is warmer and I don’t fancy anything too heavy. You can make it ahead, pop it in the fridge and serve it chilled or just let it come back to room temperature before eating.
Why We Love This Recipe
- It’s fresh but still filling. The lemon dressing keeps everything light and fresh, but with the pasta and mussels it’s still substantial enough to have as a proper meal.
- It’s a bit different. I make a lot of pasta salads, but mussels make this one feel a little more special without it actually being difficult to put together.
- The dressing is so good. It’s creamy without being too heavy, with plenty of lemon and just enough Dijon and red wine vinegar to give it a bit of a tang.
- You can make it ahead. It actually benefits from sitting in the fridge for a little while, so it’s a handy one to get ready before you need it.
- There’s loads going on in every bite. You’ve got the mussels, juicy tomatoes, edamame, pasta and that creamy lemon dressing, so it doesn’t feel like one of those boring pasta salads that’s mostly just pasta.

Ingredients
For the Pasta Salad

Cooked mussel meat – You’ll need around 300g of cooked, shelled mussels, which is roughly what you’ll get from 1kg of fresh mussels in their shells.

Pipe rigate pasta – I love this shape for pasta salad because all those little curves and openings catch plenty of the creamy dressing, but you can swap it for another short pasta shape if you prefer.

Cherry tomatoes – These add a lovely bit of sweetness and freshness. Just slice them in half before adding them to the salad.

Edamame beans – I use shelled edamame here, and frozen ones are absolutely fine, just cook them according to the packet instructions first.

Fresh parsley – A little fresh parsley adds some colour and freshness and works really well with the lemon and mussels.

Salt and pepper – Add these to taste at the end, as the mussels can already bring quite a bit of saltiness to the dish.
For the Lemon Cream Dressing

Mayonnaise – This gives the dressing that lovely creamy texture without needing to use loads of it.

Greek yogurt – I like using Greek yogurt alongside the mayo as it keeps the dressing creamy but makes it feel a little lighter too.

Olive oil – This loosens the dressing slightly and helps everything coat the pasta nicely.

Red wine vinegar – You only need a little, but it gives the dressing an extra bit of tang that works really well here.

Fresh lemon juice – Freshly squeezed is definitely worth using for this one as lemon is such a big part of the flavour.

Lemon zest – Don’t skip the zest if you can help it, it adds loads of fresh lemon flavour without making the dressing too sharp.

Dijon mustard – Just a teaspoon adds a little extra flavour and tang without making the dressing taste particularly mustardy.

Salt and pepper – Season the dressing to taste, but go fairly easy on the salt at first and add more once you’ve mixed everything together.

Recipe Instructions
Full measurements and cooking times can be found in the recipe card at the bottom of this post.
Step 1: Bring a large pot of well-salted water to a boil and cook the pipe rigate pasta according to the package directions until al dente. Drain, rinse under cold water to stop the cooking, and set aside.

Step 2: If using fresh mussels, rinse them well under cold water, scrubbing the shells and removing the beards. Discard any mussels that do not close when tapped. Place the mussels in a pot with a splash of water or white wine and a bay leaf, cover, and steam for 5–7 minutes until opened. Discard any that remain closed, remove the meat from the shells, and measure out 300 g (10.5 oz). Set aside.

Step 3: In a small bowl, whisk together the mayonnaise, Greek yogurt, olive oil, lemon juice, red wine vinegar, lemon zest, and Dijon mustard until smooth. Season with salt and pepper to taste. The dressing should be creamy with a light tang.


Step 4: Add the cooked pasta, mussel meat, cherry tomatoes, edamame beans, and chopped parsley to a large bowl. Pour the dressing over the top and toss gently until everything is evenly coated. Taste and adjust the seasoning if needed.


Step 5: Refrigerate the salad for 20–30 minutes to allow the flavors to come together. Serve chilled or at room temperature.

What to Serve with Mussel Pasta Salad
This mussel pasta salad is filling enough to eat on its own, especially for lunch or a lighter dinner, but there are plenty of things you can add alongside it if you want to make more of a meal out of it. I’d keep the sides fairly simple as there’s already quite a lot going on in the pasta.

Crusty bread – Probably my first choice. A warm baguette or some crusty sourdough is perfect for mopping up any of that creamy lemon dressing left on the plate.

Garlic bread – If you want something a little more substantial, garlic bread is always going to work well with pasta.

A simple green salad – Keep it really simple with some mixed leaves and a light dressing so it doesn’t compete with the flavours in the pasta.

Grilled vegetables – Courgettes, peppers or asparagus would all be lovely alongside this, especially during the summer.

Corn on the cob – This is a really easy option if you’re serving the pasta as part of a bigger summer meal or BBQ.

Extra seafood – If you’re making this for a bit of a seafood spread, prawns, calamari or some simply cooked fish would all work really well alongside it.
Storing
If you have any leftovers, pop them into an airtight container and keep them in the fridge. I’d aim to eat them within 1–2 days because of the mussels, and make sure the pasta salad isn’t left sitting out at room temperature for too long.
The dressing can thicken up a little once it’s been in the fridge, so I like to give everything a good stir before serving it again. If it seems a bit dry, you can add a small squeeze of lemon juice or a spoonful of Greek yogurt to loosen it up again.

Variations & Substitutions
There’s plenty of room to change things around with this one depending on what you’ve already got in the fridge. I wouldn’t mess around with the mussels and lemon too much as they’re really the stars of the recipe, but the rest is pretty easy to play around with.

Change the pasta – You definitely don’t have to use pipe rigate. Fusilli, farfalle, penne or another short pasta shape will work just as well.

Swap the edamame – If you’re not keen on edamame or don’t have any, try peas instead. They’ll still give you that lovely pop of green and a little sweetness.

Add some cucumber – Chopped cucumber would be really nice if you want to make the salad even fresher and add a bit of crunch.

Try different tomatoes – I use cherry tomatoes, but baby plum tomatoes or chopped larger tomatoes will work perfectly well too.

Change the herbs – Fresh parsley works really well with the mussels, but you could add some fresh dill or chives instead, or use a mixture.

Make the dressing lighter – You can play around with the mayo and Greek yogurt quantities if you prefer. Use a little more yogurt and less mayo for a lighter dressing.

Add a little heat – A pinch of chilli flakes in the dressing would be lovely if you like a bit of spice.

This creamy mussel pasta salad is packed with tender mussels, juicy tomatoes and edamame, all tossed with pasta in a fresh lemon dressing. It’s light, filling and perfect served chilled for an easy lunch or summer dinner.
Ingredients
For the Pasta Salad:
- 300g (10.5 oz) cooked mussel meat, shelled (from approx ~1kg/2.2 lbs mussels in shells)
- 250g (9 oz) pipe rigate pasta
- 150g (1 cup) cherry tomatoes, halved
