2. Scoop out about 2 to 3 tablespoons of the mixture and roll it into a ball, then place it on the prepared tray. You can make them bite size or stick with the larger 2 to 3 tablespoon portions.

3. Once all the mixture has been rolled into balls and arranged on the tray, cover with plastic wrap and refrigerate for 1 hour.

4. Add the remaining 1 cup of pecans, 1 cup of cranberries and 1/3 cup of parsley to a large plate. Roll each chilled cheese ball in the mixture, pressing gently so the pecans and cranberries stick.
