Mornings in our house are busy – and I mean the kind of busy where someone’s always missing a shoe, the youngest wants a second breakfast, and I’m just trying to get something healthy on the table before we all fly out the door. That’s why I love recipes like this simple vegan avocado toast. It’s quick, filling, and packed with good-for-you ingredients that don’t break the bank.

I started making this version a few months ago when I was trying to come up with more plant-based options for breakfast. We’re not vegan, but I do like to mix in a few meatless meals here and there, especially when they’re this tasty. And let’s be honest – avocado toast just makes you feel like you’ve got your life together, even if there’s laundry piling up and your coffee’s gone cold again.

What I like most about this recipe is how easy it is to customize. I usually use Dave’s Killer Bread because it’s hearty and keeps everyone full longer, but you could use whatever you have on hand. Ingredients

  • 2 slices of bread (I used Dave’s Killer bread) – I like using Dave’s Killer Bread because it’s super hearty and keeps us full longer, but any bread you have will work just fine.

  • 1 ripe avocado, sliced – A perfectly ripe avocado makes all the difference – look for one that gives just a little when you squeeze it.

  • ½ tomato, diced – Just a little tomato adds a fresh, juicy bite that balances the creaminess of the avocado.

  • 1 tsp everything bagel seasoning – This stuff is my shortcut to flavor – salty, savory, and just the right amount of crunch.

  • Salt, to taste – A pinch of salt brings out the flavor in the avocado and ties everything together.

  • Pepper, to taste – I like a few cracks of black pepper for a little kick, but you can skip it if the kids aren’t fans.

1. Cut the avocado in half, remove the pit and skin, then slice it thinly.

2. Wash and dice the tomato.

3. Toast the bread to your preferred level of crispiness.

4. Layer the sliced avocado on the toast, then top with diced tomatoes and a sprinkle of everything bagel seasoning.

5. Season with salt and pepper to taste.

6. Serve immediately and enjoy!

Top Tips

  • Use day-old bread – Slightly stale bread actually toasts better and helps cut back on waste. Just another way to stretch your grocery budget a little further!

  • Mash it if you’re in a hurry – No time to slice your avocado? Mash it up with a fork right on the toast – just as tasty, and way quicker.

  • Add a protein boost – Sprinkle on some hemp seeds or a handful of chickpeas if you want to make it more filling without adding any animal products.

  • Let the kids build their own – Set out a little toast bar with toppings like tomatoes, cucumbers, or even a bit of hummus. Makes breakfast fun and less work for you.

  • Season last – Add the salt and pepper after the tomatoes and seasoning, so you can taste and adjust as you go. A little goes a long way!

  • Double up and save time – If you’re already slicing avocado and tomatoes, prep a few extra portions and store them in separate containers for super fast breakfasts during the week.
