Family Night Favorite: This Skillet Cookie Is Big on Taste, Easy on the Wallet

Family night at our house usually means board games, mismatched pajamas, and some kind of dessert that brings everyone running to the kitchen. Lately, this chocolate chip skillet cookie has totally stolen the show. I love that it’s made with basic pantry staples, and the best part? I can whip it up in about 10 minutes, and it bakes while we’re setting up the Monopoly board (or arguing about what movie to watch, haha).

I’ve tried a lot of quick desserts over the years, but there’s something about that warm, gooey center and crispy, golden edges that just hits different. We serve it right from the skillet with a few scoops of vanilla ice cream on top. I swear the kids think it’s the best thing they’ve ever eaten. My youngest even asked if I could make it every Friday. Don’t know if I can commit to that, but it’s definitely in the regular dessert rotation now.

What I really love is how budget friendly it is. No fancy ingredients, no need for a mixer, and honestly it tastes better than some cookies I’ve paid way too much for at cafes. If you’ve got butter, sugar, an egg, and some chocolate chips, you’re pretty much good to go. Trust me, once you try it, you’ll be making excuses to bake this cookie just because.

Ingredients

  • 1/2 cup (115 g) unsalted butter, softened: I like to leave the butter out on the counter while I prep everything else. It softens just right by the time I need it.

  • 1/2 cup (100 g) light brown sugar, packed: Brown sugar gives this cookie that rich, almost caramel-like flavor we all go crazy for.

  • 1/4 cup (50 g) granulated sugar: A little white sugar helps crisp up the edges just the way we like it.

  • 1 large egg (50 g): One egg pulls the dough together and adds that perfect bit of chew.

  • 1 tsp vanilla extract (5 ml): Don’t skip the vanilla. It adds warmth and depth to every bite.

  • 1 cup (125 g) all-purpose flour: Good ol’ all-purpose flour keeps it simple and pantry friendly.

  • 1/2 tsp baking soda (2 g): This gives the cookie a little lift so it’s not too dense.

  • 1/4 tsp salt (1.5 g): Just a pinch of salt balances all that sweetness beautifully.

  • 3/4 cup (130 g) semisweet chocolate chips: These melt into gooey pockets of chocolate heaven with every spoonful.

  • 1/4 cup (40 g) dark chocolate chunks (optional): Totally optional, but I love adding dark chocolate for a richer flavor and some melty drama.

  • Vanilla ice cream, for serving (optional): If you’re feeling fancy, a scoop of vanilla ice cream on top takes this dessert over the top.

Recipe Instructions

You can find a printable recipe card at the bottom of this post.

1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch (20 cm) cast iron skillet with butter or nonstick spray.

2. In a medium bowl, use a hand or stand mixer to cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.

3. Beat in the egg and vanilla extract until fully combined.

4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

5. Fold in the semisweet chocolate chips and dark chocolate chunks (if using).

6. Transfer the cookie dough to the prepared skillet and spread it evenly with a spatula, smoothing the top.

7. Bake in the preheated oven for 20–25 minutes, or until the edges are golden brown and the center is just set. For a gooier cookie, bake for less time; for a firmer cookie, bake slightly longer.

8. Remove the skillet from the oven and let the cookie cool for about 5 minutes. The skillet will continue to cook the cookie slightly as it cools.

9. Serve warm, directly from the skillet, with scoops of vanilla ice cream on top if desired.

Top Tips

  • Use room temp butter: Softened butter blends better with the sugars and gives you that smooth, fluffy base for the cookie dough.

  • Don’t overmix: Once you add the dry ingredients, mix just until everything is combined. Overmixing can make the cookie tough.

  • Customize your chocolate: Mix in whatever you’ve got. Milk chocolate chips, chopped candy bars, or even a swirl of Nutella work great.

  • Check early: Ovens vary, so start checking at the 20-minute mark. The center should look just set if you want it gooey.

  • Let it rest a few minutes: It keeps cooking in the skillet after you pull it out, so a short rest helps it set up just right.

  • Serve straight from the skillet: Fewer dishes and way more fun. Just grab some spoons and dig in.

  • Make it ahead: You can prep the dough earlier in the day and refrigerate it right in the skillet. Just bring it to room temp before baking.

  • Add a pinch of flaky salt on top: It brings out the chocolate and makes it feel extra special. Totally optional but so good.

My Favorite Ways to Enjoy Chocolate Chip Skillet Cookie

  • Warm with vanilla ice cream: You can’t beat the classic combo of warm cookie and cold, creamy ice cream. It melts into the cookie just enough and it’s so good.

  • With a cup of coffee or hot cocoa: A little slice in the afternoon with something warm to sip makes for the perfect pick-me-up.

  • Topped with whipped cream and sprinkles: This is the kids’ favorite. We sometimes add a cherry on top and call it cookie sundae night.

  • Straight from the skillet with spoons: No plates, no fuss. Just everyone grabbing a spoon and digging in. It’s messy in the best way.

  • As a birthday treat: Skip the cake. Stick a candle in the center of the skillet and let everyone scoop their own slice.

  • Chilled from the fridge the next day: It sounds a little odd, but the chilled cookie has a firmer texture and it’s really satisfying. Great with a glass of milk.

  • Packed for lunch: Once it cools, slice it up and sneak a piece into lunchboxes for a sweet surprise.

FAQs

Can I make this without a cast iron skillet?
Yes, you can! A regular oven-safe 8-inch baking dish or cake pan works just fine. The edges might not crisp quite the same, but it will still taste delicious.

Can I double the recipe?
Totally. Just use a larger skillet (like a 10- or 12-inch) or bake in a 9×13 pan. You may need to add a few minutes to the bake time, so keep an eye on the center.

How should I store leftovers?
If you have any left, just cover the skillet with foil or transfer slices to an airtight container. It keeps well at room temp for about 2 days or in the fridge for up to 4 days.

Can I freeze it?
Yes! Slice it into portions and freeze in a zip-top bag or container. Warm it up in the microwave or oven when you’re ready for a treat.

What if I don’t have brown sugar?
You can use all granulated sugar, but the cookie may be a bit lighter and less chewy. If you have molasses, stir a little into the sugar to mimic that brown sugar flavor.

Can I use different mix-ins?
Absolutely. Try white chocolate chips, chopped nuts, crushed pretzels, or even mini marshmallows. It’s a fun one to customize.

How do I know when it’s done?
The edges should be golden brown, and the center just set. If you like it extra gooey, take it out a minute or two early. For a firmer cookie, let it bake a little longer.
