Grinch Biscoff Cookies
If you’re looking for a fun little Christmas treat that’s ridiculously easy to make, you’re going to love these Grinch Biscoff Cookies! They’re bright green, they’ve got the cutest little red hearts, and they’re just perfect for Christmas parties, movie nights, or adding to a plate of Christmas cookies. I mean, how cute are they?!
I absolutely love Biscoff cookies anyway, so dipping them in sweet white chocolate seemed like a pretty good idea to me! They’re dipped about two-thirds of the way into that lovely Grinch green chocolate, so you still get to see some of the cookie underneath. And of course, you can’t have Grinch cookies without that little red heart!
The best bit is that there’s no baking involved at all. You only need a few ingredients, and they’re really quick to put together. This is a lovely one to get the kids involved with too, especially if you’re planning a Grinch movie night over Christmas. Just make sure you make enough because I can’t see these lasting very long!
Why We Love This Recipe
- They’re so easy! Honestly, you can’t get much easier than dipping cookies in melted chocolate! No baking, no messing around with cookie dough, just a few ingredients and you’re done.
- They’re so cute! I love the little red hearts against the bright green chocolate. They’re such a fun addition to a Christmas cookie platter.
- Biscoff cookies are delicious anyway! But cover them in white chocolate and they’re even better. That lovely crunch with the sweet chocolate is so good!
- The kids can help! This is a really fun one to make with the kids. They can get involved with dipping the cookies and adding the little hearts. Just be prepared for a bit of mess!
- Perfect for a Grinch movie night! I can’t think of a better excuse to put on The Grinch, get cozy on the couch and tuck into a few of these.
- You can make them ahead of time. Anything I can get made before the Christmas madness really kicks in is a winner in my book!

Ingredients
-
8 Lotus Biscoff cookies – I love the caramelized flavor of Biscoff cookies, and they’ve got a lovely crunch that works really well with the white chocolate coating.
-
10 oz Ghirardelli white chocolate melting wafers – These melt really nicely and give the cookies that lovely smooth chocolate coating. You can use another brand of white chocolate melting wafers if you prefer.
-
7 drops bright green oil-based food coloring (or as needed) – This is what gives our cookies that brilliant Grinch green color! Make sure you use oil-based coloring that’s suitable for chocolate, and add a little at a time until you’re happy with the shade.
-
8 red candy heart sprinkles – You can’t have Grinch cookies without their little red hearts! These are such a cute finishing touch.
-
1/4 teaspoon coconut oil (optional) – If your melted chocolate is a little too thick for dipping, a tiny bit of coconut oil can help thin it out and make coating the cookies easier.
Recipe Instructions
Full measurements and cooking times can be found in the recipe card at the bottom of this post.
Step 1: Line a baking sheet or large plate with parchment paper and set aside.
Step 2: Place the white chocolate melting wafers in a microwave-safe bowl. Melt according to the package instructions, stirring between intervals until completely smooth. For Ghirardelli melting wafers, follow the directions on your specific package to avoid overheating.
Step 3: Stir in the coconut oil, if using, until fully combined. Add a few drops of bright green oil-based food coloring and stir until the chocolate is evenly colored. Add more coloring if needed to get that classic Grinch green.

Step 4: Take a Biscoff cookie and dip approximately two-thirds of it into the melted green chocolate, leaving the bottom section uncovered so you can still see the cookie.

Step 5: Gently lift the cookie out of the chocolate and allow any excess to drip back into the bowl.
Step 6: Place the cookie onto the prepared parchment paper and, while the chocolate is still soft, gently press a red candy heart sprinkle onto the green coating.

Step 7: Repeat with the remaining Biscoff cookies until all eight are decorated.
Step 8: Leave the cookies at room temperature for approximately 20–30 minutes, or until the chocolate has completely hardened.
Step 9: Once set, carefully remove the cookies from the parchment paper and serve.

What to Serve with Grinch Biscoff Cookies
If you’re making these for a Christmas party or a Grinch movie night, why not go all out and make a few more Grinch-themed treats to go with them? I love the idea of putting together a big plate of green goodies, especially if you’ve got kids who love The Grinch!
I’ve actually got quite a few other Grinch recipes that would be perfect alongside these cookies. Here are some of my favorites:
-
Grinch Brownies – Because you can never have too much chocolate at Christmas!
-
Grinch Oreos – Another really easy little treat that looks so cute on a Christmas dessert platter.
-
Grinch Muddy Buddies – Perfect for putting in a big bowl and letting everyone help themselves during a movie.
-
Grinch Pretzels – I love having something a little salty alongside all those sweet Christmas treats.
-
Grinch Fruit Kabobs – A fun way to add a bit of fruit to the table amongst all the chocolate and cookies!
You could even serve them with mugs of hot chocolate for a cozy Christmas movie night. And if you’re planning a proper Grinch-themed party, I’ve got a whole collection of 10 easy Grinch-themed food and drink ideas with plenty more fun treats to choose from!
Storing
One of the things I love about these Grinch Biscoff Cookies is that you can make them ahead of time, which is always handy when you’ve got a million things to do in the run-up to Christmas!
Once the green chocolate has completely set, pop the cookies into an airtight container and keep them somewhere cool and dry. They’ll stay fresh for up to a week, although I doubt they’ll last that long in our house! If you’re stacking them, I’d put a piece of parchment paper between each layer to stop the chocolate coatings from sticking together.
Do they need to go in the fridge? Nope! In fact, I’d avoid refrigerating them if you can. The moisture in the fridge can make the Biscoff cookies lose some of their lovely crunch, and you might find the chocolate develops a bit of condensation when you take them out.
Can you freeze them? I wouldn’t recommend it. They’re so quick and easy to make fresh, and freezing and thawing can affect both the texture of the cookies and the appearance of the chocolate coating.
If you’re making these for a Christmas party, I’d happily make them a day or two beforehand. That’s one less thing to worry about on the day!

Variations & Substitutions
I love how simple these Grinch Biscoff Cookies are, but there’s plenty of room to have a little fun with them too! You can easily swap a few things around depending on what you’ve already got in the cupboard or how you want your Christmas cookies to look.
-
Try different cookies. Don’t have any Biscoff cookies? Oreos, graham crackers, or even shortbread cookies would work really well too.
-
Use green candy melts. If you don’t fancy messing around with food coloring, you can use green candy melts instead. They’re already the right color, so that’s one less thing to do!
-
Add some Christmas sprinkles. I love the little red hearts, but you could scatter a few festive sprinkles over the chocolate too. Just make sure you add them before it sets.
-
Try different chocolate. You could use milk or dark chocolate for dipping if you prefer, although you won’t get that classic Grinch green color.
-
Make them extra chocolatey. Once the green coating has set, drizzle a little melted white chocolate over the top for an extra sweet treat.
-
Make mini Grinch cookies. Use smaller cookies to make bite-sized treats. These would be really cute on a Christmas dessert platter, especially if you’re making lots of different goodies!
FAQs
Can I use regular white chocolate instead of melting wafers?
Yes, you can! I prefer using melting wafers because they're really easy to work with and give the cookies a lovely smooth coating. If you're using regular white chocolate, just be careful not to overheat it when melting. You'll also need to make sure your green food coloring is suitable for chocolate.
Can I make Grinch Biscoff Cookies ahead of time?
Absolutely! These are great for making ahead, especially if you're planning a Christmas party and want to get a few things sorted beforehand. I usually recommend making them a day or two in advance and keeping them in an airtight container somewhere cool and dry.
Why is my melted white chocolate going thick and lumpy?
This usually happens when the chocolate gets too hot or comes into contact with water. Regular water-based food coloring can cause problems too, so make sure you're using oil-based coloring. Melt your chocolate gently and stir it regularly rather than trying to rush things.
Can I use green candy melts instead of white chocolate?
Yes! Green candy melts are actually a really handy alternative because you don't need to add any food coloring. Just melt them according to the package instructions and dip your Biscoff cookies as normal.
Do Grinch Biscoff Cookies need to be refrigerated?
Nope! You can keep them in an airtight container at room temperature for up to a week, as long as your kitchen isn't too warm. I actually prefer keeping them out of the fridge because it helps the Biscoff cookies stay nice and crunchy.
Can I use different cookies to make Grinch cookies?
Of course! I love the caramelized flavor of Biscoff, but you could use Oreos, shortbread cookies, or graham crackers instead. It's a really easy recipe to play around with, so use whatever cookies you fancy!
How long does it take for the chocolate coating to set?
Usually around 20–30 minutes at room temperature, although it can take a little longer if your kitchen is warm. Just leave the cookies on the parchment paper until the chocolate has completely hardened before moving them.
What can I use if I can't find red heart sprinkles?
You could use red heart-shaped candies or even pipe a little red heart onto each cookie using red candy melts. The little hearts are what give these cookies their classic Grinch look, so I'd definitely try to include them if you can!
Are Grinch Biscoff Cookies a good Christmas party treat?
Definitely! They're easy to make, look really cute, and you don't need to spend ages in the kitchen preparing them. They're perfect for Christmas cookie platters, kids' parties, or a Grinch-themed movie night. You can easily double or triple the recipe if you're feeding a crowd, too!
