Homemade Chicken Alfredo Flatbread Pizza

Some nights I just need something quick, easy, and something everyone will actually eat, and this recipe is all of that. It’s one of those meals that feels a little more special than throwing together sandwiches or frozen pizza, but it still takes hardly any effort.

I make this a lot when we’ve got leftover cooked chicken in the fridge that needs using up. The creamy Alfredo sauce, melted cheese, and crispy flatbread work so well together, and adding a little spinach makes me feel like I’m balancing things out a bit too.

This is such an easy recipe to adapt too so it’s great for using up leftover veggies or customizing to suit what everyone likes. Sometimes I add bacon or mushrooms, sometimes I swap the spinach for arugula, and sometimes we just keep it simple exactly as it is. Step 1: Preheat your oven to 400°F (200°C).

Step 2: Place the flatbreads on a baking sheet and brush lightly with olive oil.

Step 3: Spread a layer of Alfredo sauce over each flatbread.

Storing

I usually let the flatbread cool completely, then store the slices in an airtight container in the fridge. They’ll keep well for around 2 to 3 days.

To reheat, I prefer popping the slices back into the oven or air fryer for a few minutes rather than using the microwave. It helps crisp the flatbread back up a little instead of making it soft.

I probably wouldn’t freeze this one because the texture of the flatbread and spinach can change quite a bit once thawed, but it’s so quick to make fresh anyway.
