1. Using an electric mixer combine the cookies, ½ tablespoon of sprinkles and cream cheese.

2. Blend until well combined.

3. Prepare a tray with parchment paper.

4. Roll 1.5 tablespoons of the cookie mixture into a ball and place onto the parchment.

5. Repeat with all the mixture.

6. Place the tray with the cake balls into the freezer to chill for at least 30 minutes.

7. Meanwhile using a serrated knife carefully cut off the ends of the sugar cones.

8. In a microwave safe dish in 30 second intervals melt the pink candy melts.

9. Dip the end of each cone into the melted chocolate and place onto a cake ball.

10. The chocolate should set very quickly and once it has, dip your cake ball into the chocolate and place onto the parchment paper. 

11. No need to let the excess drip off because you want a little puddle to look like the ice cream is melting.

12. Immediately sprinkle with extra sprinkles.

13. Let set or place in the fridge for 5 minutes to speed up the setting process.
