Weekly Meal Plan No 11

It’s week two of the Easter holidays here, and my first week of full-time self-employment since quitting my job and running my own business full time. It’s a scary time, and I’m itching to work lots this week but I’m taking it easy and enjoying quality time with the kids this week before they go back to school after the Easter weekend.

So, here’s this week’s meal plan.

Monday – Chicken kievs, oven chips & salad/baked beans. Day out planned today, so a really quick and easy meal planned for when we get home.

Tuesday – Toad in the hole, sliced potatoes & veg. This is always a popular choice in our house, and it’s so simple to make. I’ll also be using a crinkle cutter to slice the potatoes and cooking them in the air fryer.

Wednesday – Pasta bake, garlic bread & salad. My eldest has a late appointment today, so I’ll be using a jar of sauce for this one.

Thursday – Jacket potatoes/pizza. Thursday evening is usually swimming lesson time, so I always tend to plan quick and easy things my husband can throw in the oven. This week, there’s no swimming but there is martial arts in its place. Jacket potatoes are one of my favourite meals, but unfortunately, none of the kids will eat them, so it’ll be a frozen pizza shared between them.

Friday – Spaghetti & meatballs with garlic bread. I bought the meatballs last week as part of the 3 for £10 deal at Asda, so I froze them and will use them this week.

Saturday – Chicken & veg stir fry.

Sunday – Chicken roast dinner with air fryer roast potatoes, Yorkshire puddings and gravy.

Our weekend meals generally look fairly repetitive, but this suits us.
