Easy Flapjack Recipe to make in bulk

I’m a huge fan of home-cooked snacks at the moment. With the cost of pretty much everything going up, cooking your own snacks and meals from scratch is a great way to save some money. School holidays are always more expensive when it comes to food shopping in our house. The kids just seem to be hungry from the minute they get up until the minute they go back to bed. This easy flapjack recipe is perfect for cooking up in bulk and storing away for quick and easy snacks throughout the week.

This recipe is also great if the kids want to join in with baking. It’s really simple to make and only needs 4 ingredients. Just be sure to help them put it in the oven. I’ve always found that when the children are involved in the cooking, they’re far more likely to enjoy what they’ve made than if I’d cooked it on my own.

Note that if you’ve landed here from the USA, then these are not to be confused with the American Flapjack which is what we in the UK call a pancake! Flapjacks are rolled oats baked in the oven with syrup to create a really tasty and filling snack.

Easy Flapjack Recipe to Make in Bulk

This is the simplest and tastiest easy flapjack recipe I've found to date. It's really simple and the end result is delicious flapjacks that the whole family enjoy. I cook these in bulk, especially during the school holidays when they're really handy for hungry kids to grab.

Ingredients
  

  • 500 grams Porridge Oats
  • 250 grams Butter
  • 250 grams Light Brown Sugar
  • 6 tbsp Golden Syrup

Instructions
 

  • Heat the oven to 180 degrees
  • Melt the butter
  • Mix all of the ingredients together thoroughly in a large bowl
  • Line a large baking tray with baking paper, or use butter to lightly grease the pan. The larger the tray, the thinner the flapjacks will be
  • Press the mixture into the tray using the back of a spoon to flatten
  • Lightly score the mixture into 24 pieces. This is essential if you want to be able to easily extract the flapjacks once they're cooked
  • Bake the flapjacks for around 20 minutes or until golden brown. The longer you leave them in the oven the crunchier they will be, so if you prefer a chewier flapjack then take them out of the oven sooner.

How much do flapjacks cost to make?

The price per portion will vary depending on where you shop. I bought my ingredients from ASDA using mainly their Smart Price range. The cost per flapjack is £0.10. So they work out really cheap to make.

What equipment do you need to make flapjacks?

You really don’t need anything too special in order to make flapjacks! You just need a large mixing bowl, kitchen scales, measuring spoons and a baking tray. That’s pretty much it!

I use these measuring spoons as I find them really easy to use and they all clip together making them easy to store too.

Flapjacks soft after cooking

When I first started cooking flapjacks and took that first batch out of the oven, I was a little worried that the flapjacks were soft after cooking. I put them back in the oven for another five minutes but they still came out soft. I decided to leave them on the side to cool down and see if they hardened up. Thankfully, they did. It is perfectly normal for flapjacks to be soft after cooking, they will harden up once they’ve cooled down.

Do you need to score flapjacks before cooking

This is definitely a step that you can’t miss! I recommend scoring the flapjacks slightly before you put the mix in the oven. Then, once you’ve taken the tray out of the oven to cool down, leave them for ten minutes or so and then cut right through where you’ve scored. Your flapjacks will still be a little wobbly, but this will make it so much easier to remove the flapjacks from the tray when they’ve cooled down.

How long do flapjacks take to cool down?

If you leave them in the tray, then flapjacks can take a good hour to cool completely. But there’s nothing nicer than a warm flapjack with a nice cup of coffee!

The flapjacks will be cool enough to eat after about 15 minutes. Just make sure you check before allowing the kids to dive in.

How to store flapjacks

I store my flapjacks in an airtight food storage container once they’re cooled and cut into squares. Don’t make the same mistake as I once did and use kitchen towel to line the tub, as the flapjacks WILL stick to the paper and it’s not easy to peel it off. You can use baking paper if you want to, or just store them in the container as they are.

How long can you keep homemade flapjacks?

When I batch cook flapjacks this easy flapjack recipe which gives us 24 flapjacks, they usually last about a week. You can keep them for up to around 10 days though. You can also freeze flapjacks if you need to so that they’ll keep even longer. Batch cooking and freezing food is perfect if you know you’ve got a busy few weeks ahead, as you can just pull things out of the freezer each morning and you’re set for the day.

This is one of my favourite go-to recipes when I know the kids are going to be home. They always get eaten up, they’re filling, and as I’ve made them myself I know exactly what’s in them.
