Weekly meal plan

It’s finally half-term week! The kids are definitely ready for a rest, and I’m ready for a more laidback start to the day without all the rushing about that generally happens on school mornings!

As I work from home, the school holidays can be a little stressful. The older two are generally pretty good at occupying themselves during my working hours, but Connor is only 4, so he does need me quite a lot still. I always feel really guilty about working during the holidays,  but then if I went out to work the kids would have to go to childcare and I’d feel guilty about that too. We can’t win as Mums sometimes! My Mum and Andy’s parents will be helping us out a little, and I’ve booked two days off work too,  so it should all work pretty well this time round – fingers crossed!

School holidays often mean we’re out in the afternoons once I’ve finished working,  so I’ve tried to plan fairly quick and easy meals (including one really quick “something on toast” meal. I can always jig the order of the meals about a bit if I need to.

Monday – I’m going to have a go at making chicken enchiladas. I’ve used packet stuff before but I’m going to try to do this from scratch. We love fajitas in our house, so I think this meal should go down fairly well.

Tuesday – I’ll cook up a big batch of tomato base sauce from the Feed Your Family for £20 a Week book and use it to make the chilli. I love chilli over a jacket potato, it’s my idea of perfect comfort food!

Wednesday – Beans/spaghetti on toast. I’m off work on Wednesday but we’re going out with some friends so may need a really quick and easy meal when we get home if we’re a little late.

Thursday – Chicken kievs, slimming world chips and salad. This is such a simple meal yet another of my favourites.

Friday – Spaghetti & meatballs (using the tomato sauce made earlier in the week).

Saturday – Pizza & salad night (it’s the law).

Sunday – It’ll be a roast dinner, possibly at the in-laws house which would be ideal!

  1. oooh I haven’t had a chilli with jacket potatoes in ages, it used to be one of my favourite meals. I’m so tempted now.

    1. They were really good! The older two loved them, the youngest wouldn’t even try them but we’ll definitely be having them again.
