Weekly Meal Plan No 3

Last week was half term here, and as always our routine went completely out of the window! We ended up eating with family a couple of times so our meals were shuffled around a bit here and there. We also didn’t end up having the meatballs I’d planned for tea last Friday so I’ve popped those in the freezer along with the sauce I’d made earlier in the week.
With the kids back in school, I can crack on with all the work that’s been building up over the last few weeks, get back on top of the housework and generally gain some sense of control over things. Back to school does mean a return to all the after school activities too though so there are a few quick and easy meals thrown in the mix as usual.
Monday – Chicken enchiladas. This was such a big hit last Monday that everyone’s been asking when we can have it again.
Tuesday – Savoury pancakes. I’m not sure how these will turn out! I’m going to make them from scratch and stir fry some mushrooms, ham, onions and peppers. I know I’ll enjoy it but I’m not sure about the children. I’ve got some wraps on standby in case the kids don’t like them.
Wednesday – Spaghetti & meatballs. We were meant to have this last week but ended up eating out with family. All I need to do is remember to get the meatballs and the sauce out of the freezer on Wednesday morning and this will be a quick and easy tea. Izzy & Connor don’t like meatballs so they’ll just have the spaghetti with the sauce (made using the Feed your Family for £20 a Week recipe).
Thursday – Jacket spuds with Tuna – so simple yet so tasty.
Friday – Sausage, mash and beans. I bought the sausages a couple of weeks back on a multi-buy offer so we already had them in. Again, I just need to remember to get them out of the freezer!
Saturday – Pizza night (the kids get really upset if we don’t do this).
Sunday – We’ll be having Sunday lunch at Andy’s parents.

I love enchiladas – so yummy! My two children also get antsy if they don’t have pizza at some point during the week 🙂
