Weekly Meal Plan No 7

I neglected to share my meal plan last week, life kind of got a little bit hectic with the kids home and both Andy and me still working as usual. I did plan our meals and use my meal plan to sort my shopping as usual, I just didn’t get round to sharing it.
This week, things have settled down a little in the shops and I was able to get most things I wanted. I had a delivery slot for Saturday morning and although some things were missing, they were things we can do without for another week or so.
I’ve planned out easy meals because things are pretty busy here at the moment, and cooking complicated meals just adds to the stress!
Monday – Chicken fajitas & rice. We’ve got into the habit of having fajitas or enchiladas on Mondays. They’re always a hit and they’re both pretty easy to make.
Tuesday – Sausage, mash, veg & gravy. I found lots of frozen veg when I went through our freezers just over a week ago, so I’m making use of that as well as using some fresh veg.
Wednesday – Quiche, baked potatoes & salad. Another simple meal without too much prep needed.
Thursday – Chicken kievs, SW chips & salad. Kievs always go down well here and I LOVE homemade chips cooked Slimming World style (potatoes chopped into chips and cooked in the oven with fry light spray).
Friday – Lasagne, garlic bread & salad. I’m making the lasagne but using ready-madejars this week for the sauces. I do usually make my own but the jars were available and chopped tomatoes weren’t!
Saturday – The usual pizza & salad, it’s the law on Saturday nights here.
Sunday – A chicken roast dinner with all the trimmings. I make my own roast potatoes as well as mash for my eldest who doesn’t like roasts!!!
