What to do with all that leftover turkey?!

If you’re anything like us, you’ll have cooked far too much food over the last few days and may be now stuck, wondering just what to do with all that leftover turkey!

I’m fairly traditional at heart when it comes to turkey. We usually have two turkey dinners, one on Christmas Day followed by a second on Boxing Day so that both my parents can have a Christmas dinner with us. I always cook way too much turkey so the next few days is mostly made up of turkey sandwiches. I love turkey on a freshly baked baguette with a little coleslaw, hubby usually has leftover stuffing with his. After a day or so, I separate the turkey into portions and freeze it so none of it gets wasted. I hate throwing food away, you may as well just throw a ten pound note in the bin!

However, there are far more exciting and adventurous ways to use up the turkey! I thought I’d do a little research and share some of them!

Moroccan Spiced Turkey Pie – this looks absolutely delicious and fairly light too which might be just what you need after all the over-indulgence.

Turkey Casserole – A fab winter warmer, throw it all in the pot and let it simmer away.

Mini Turkey & Cranberry Pies – A nice festive alternative, can’t beat cranberries at this time of year.

Turkey Curry – Perfect if you fancy something with a little kick.

Turkey & Chorizo Bake – My son would love this, anything with chorizo in is always a winner.

Turkey Club Sandwich – Simple but delicious.

Turkey Risotto

Turkey & Mushroom Risotto

Reading all of these, I’m seriously tempted to get a little more adventurous! But, if I’m honest I won’t, I cooked so much over Christmas that I’m done!
