For me, chicken soup is the ultimate comfort food – particularly when the weather starts to get a little colder. The beauty of soup is that it’s incredibly easy to make, you can use pretty much any ingredients you like, and it’s a nice healthy meal for the whole family to enjoy.
When the nights start getting longer and the cold weather starts creeping in, that’s the time I always dig out our crockpot. Slow cookers are a great way to cook a whole range of meals and they’re super handy during the week when you might not have as much free time to prepare a meal in the evening. Just throw all your ingredients into the slow cooker in the morning and come home to a healthy, nutritious meal ready to go.
Chicken soup in particular works really well in the crockpot – the chicken comes out juicy and tender and the vegetables are cooked to perfection. If you want to thicken up your soup when you’re almost ready to serve, turn the crockpot up to the highest setting and take off the lid for the last twenty minutes or so. You can also use cornflour to thicken up the soup.
