Creamy Slow Cooker Pork Chops with Garlic Parmesan Sauce

If you’re a regular visitor here then you’ll know by now that I absolutely love my slow cooker. It’s a real game changer during the week when the kids have a million and one activities after school and I still need to put food on the table.

This recipe is one of those easy wins that feels a little more special than your usual weeknight meal (although it’s actually incredibly simple). The pork chops cook low and slow until they’re really tender, and that creamy garlic Parmesan sauce brings everything together in the most comforting way. It uses everyday ingredients, so you don’t need to plan ahead or spend extra at the shop, which I always appreciate.

It’s the kind of dinner that works for real family life no matter how chaotic. You can get it started earlier in the day, get on with everything else you need to do, and come back to something that smells amazing and tastes like you’ve put in far more effort than you actually have. It’s become one of those meals I keep coming back to when I need dinner to be easy.

Why We Love This Recipe

  • It’s a true dump-and-go dinner: You can get this into the slow cooker in just a few minutes, which is exactly what I need on days when we’re rushing out the door.
  • The pork chops feel less boring: Pork chops can be a bit hit-or-miss, but that creamy garlic Parmesan sauce makes them feel much more interesting.
  • Easy to pair with whatever you have: We’ve served this with mashed potatoes, pasta, rice, and even just bread when I didn’t feel like making much else.
  • The leftovers are really useful: I love having extra for lunch the next day or a quick dinner when everyone is eating at different times.
  • Budget-friendly: Pork chops are usually one of the cheaper meats I can pick up, especially when they’re on sale.

Ingredients

  • 4 boneless pork chops: These cook up beautifully tender and juicy in the slow cooker, making them perfect for an easy family dinner that even the little ones can enjoy.
  • 1 cup heavy cream: This creates the creamy sauce. It’s definitely not an everyday ingredient in our house, but it’s worth it for this recipe.
  • 1/2 cup grated Parmesan cheese: This adds loads of flavor to the sauce and helps make it feel a little more special.
  • 4 cloves garlic, minced: I use fresh garlic here because it really makes a difference to the flavor. But don’t worry too much if you only have ready minced garlic, it works just fine too.
  • 1 teaspoon Italian seasoning: A simple way to add a bit of herby warmth without reaching for lots of different spices.
  • 1/2 teaspoon onion powder: Easy pantry staple that adds extra flavor without needing to chop another onion.
  • Salt and pepper to taste: Just enough to bring all the flavors together and suit your family’s taste. You can leave these out completely if you are feeding younger kids.
  • Fresh parsley, chopped (optional, for garnish): Completely optional, but I like adding a little on top before serving if I have some in the fridge.

Serving Suggestions

  • Mashed potatoes: My favorite option because they soak up all of that creamy garlic Parmesan sauce and all the kids love mashed potatoes.
  • Buttered pasta: This is a really easy and usually a safe option if you have picky eaters at the table.
  • Rice: Great if you want something simple that helps stretch the meal a little further.
  • Green beans: Adds something fresh to balance out the creamy sauce and it’s one of the easier vegetables to get my kids to eat.
  • Side salad: A lighter option if you don’t want the meal to feel too heavy.
  • Dinner rolls or crusty bread: Perfect for mopping up any leftover sauce.

Storing & Reheating

Leftovers store really well, which is always a bonus when I’m making a creamy slow cooker meal like this. Once everything has cooled, transfer the pork chops and sauce to an airtight container and keep it in the fridge for up to 3 days.

To reheat, I usually use the microwave if I’m in a rush. If the sauce has thickened up in the fridge, just add a small splash of milk or cream before reheating to loosen it up again.

I don’t freeze this one very often because creamy sauces can sometimes change texture once thawed. That said, if you do want to freeze leftovers, it still works fine for a quick dinner later on.

Variations & Substitutions

If you don’t have pork chops, chicken breasts or chicken thighs actually work really well in this recipe too. I’ve made it both ways depending on what was on sale that week.

If heavy cream isn’t something you usually keep in the fridge, you can use half-and-half instead. The sauce won’t be quite as rich, but it still tastes great.

You can easily add vegetables to make this feel like more of a complete meal. Mushrooms work really well, and I’ve also added spinach toward the end when I’ve had some that needed using up.

If your family loves extra garlic, feel free to add another clove or two. We love garlic in our house, so I sometimes do this depending on who’s eating.

FAQs

Can you put raw pork chops in the slow cooker?

Yes, you can add raw pork chops straight into the slow cooker. That’s one of the reasons I love this recipe because there’s no extra step of browning them first.

How do you keep pork chops from drying out in the slow cooker?

I’ve found cooking them on low works best if you have the time. The creamy sauce also helps keep them from drying out, but I’d still avoid leaving them in there much longer than the recipe suggests.

Can I use bone-in pork chops instead?

This is actually one of the questions I get asked most often. The answer is yes, absolutely. I usually use boneless because that’s what my kids find easier to eat, but bone-in pork chops work too. They may just need a little extra cooking time.

Can I prep this the night before?

Yes. You can season the pork chops and mix the sauce the night before, then keep everything in the fridge until you’re ready to get the slow cooker going the next day.

Can I freeze leftovers?

You can, although I’ll be honest, creamy sauces don’t always freeze perfectly. It still works fine for a quick dinner later on though.

What can I use instead of heavy cream?

Half-and-half works well if that’s what you already have. I’ve also used a mix of milk and cream before when I was trying to use up what was in the fridge.

What should I serve with garlic Parmesan pork chops?

We usually have these with mashed potatoes, pasta, or rice because they soak up the sauce really well. Green beans are always an easy side too.

Notes

  • For extra flavor, you can quickly sear the pork chops in a pan before adding them to the slow cooker, but it’s not essential.
  • Freshly grated Parmesan works best if you have it, but I’ve used the pre-grated kind before and it still turns out just fine.
  • If the sauce looks a little thin at the end, leave the lid off for 15–20 minutes on high to help it thicken slightly.
  • Try not to overcook the pork chops, especially on high, as they can become a bit dry if left too long.
  • You can add vegetables like mushrooms or spinach during the last hour of cooking to make it more of a complete meal.
  • If the sauce thickens too much after storing, just stir in a splash of milk or cream when reheating to loosen it up.
