I’ve pulled together some of my favorite cookie recipes, from classic chocolate chip cookies to rich chocolate treats, cozy cinnamon bakes, and plenty of Biscoff goodness. There are loads of different flavors to choose from, so you’re bound to find one that catches your eye.

9. Tahini Chocolate Chip Cookies

The tahini gives these a rich, nutty flavor that works so well with the chocolate chips. They’re a little different from your usual cookie, but they’re perfect with a fresh cup of coffee.

Servings: 15 cookies

Ingredients:

  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (120g) tahini (well-stirred) (get a brand that’s not bitter)
  • 3/4 cup (150g) dark brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg + 1 yolk (for extra richness)
  • 2 tsp vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 4 oz (115g) dark chocolate, chopped
  • 1/3 cup (50g) chopped toasted pecans
  • Flaky sea salt, for finishing
  1. Melt the butter in a small saucepan over medium heat, stirring constantly, until it turns golden and smells nutty. Remove from the heat and let it cool for 5 minutes.

  2. In a large bowl, whisk together the browned butter, tahini, brown sugar, and granulated sugar until smooth. Add the egg, egg yolk, and vanilla, and whisk again until well combined.

  3. In a separate bowl, whisk the flour, baking soda, baking powder, salt, and cinnamon.

  4. Gently fold the dry ingredients into the wet mixture, then stir in the chopped dark chocolate, toasted sesame seeds, and toasted almonds.

  5. Scoop the dough into 2-tablespoon-sized balls and place them on a baking sheet. Chill in the fridge for 15–20 minutes to help keep them thick and chewy.

  6. Preheat the oven to 350°F (175°C). Arrange the dough balls 2 inches apart on a lined baking sheet and bake for 8–10 minutes, until the edges are golden but the centers are still soft.

  7. While warm, sprinkle with flaky sea salt. Let the cookies rest for 5 minutes before transferring to a wire rack to cool.

 

10. Fudgy Brownie Cookies

If you can’t decide between a brownie and a cookie, these give you the best of both! They’re rich, chocolatey, and just right with a hot cup of coffee.

11. Chocolate Mallow Cookies

These are soft, chocolatey, and topped with gooey marshmallow for an extra treat. They’re just the thing to enjoy with a coffee when you’re in the mood for something sweet.

Servings: 18-22

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 â…“ cup flour
  • ¾ cup cocoa powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 7 oz container marshmallow fluff

Instructions:

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper. Set aside.

  2. In the bowl of a stand mixer, cream the butter and sugar together until smooth and creamy.

  3. Add the eggs and vanilla, mixing well and scraping down the sides of the bowl as needed to fully combine.

  4. Add the flour, cocoa powder, baking soda, and salt. Mix until the dough is fully combined, scraping the bowl as necessary.

  5. Gently fold in the marshmallow fluff just until evenly distributed, being careful not to overmix.

  6. Using a large ice cream scoop, portion the cookie dough onto the prepared baking sheets. Place the trays in the freezer for about 10 minutes to chill the dough before baking.

  7. Bake for 10 to 12 minutes, or until the centers are set. Remove from the oven and allow the cookies to cool before serving.

12. Crumbl Dark Dream Cookies

These are packed with chocolate from start to finish, thanks to the cocoa and plenty of chocolate chips. They’re just the sort of cookie to enjoy with a strong cup of coffee.

Servings: 9-11

Ingredients:

  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 tbsp vanilla
  • 1 â…“ cup flour
  • ½ cup cocoa powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup semi-sweet chocolate chips, divided

Instructions:

  1. Preheat the oven to 350°F. Line several baking sheets with parchment paper and set aside.

  2. In the bowl of a stand mixer, cream together the softened butter and sugars until light and smooth.

  3. Add the egg and vanilla extract, mixing well and scraping down the sides of the bowl as needed.

  4. Mix in the flour, cocoa powder, baking soda, and salt until fully combined, stopping to scrape the bowl for even mixing.

  5. Fold in about half of the chocolate chips until evenly distributed throughout the dough.

  6. Use a large ice cream scoop to portion the dough onto the prepared baking sheets.

  7. Gently flatten each portion into a disc, then press the remaining chocolate chips onto the tops of the cookies.

  8. Bake for 10–12 minutes, or until the centers are set. Allow the cookies to cool on the baking sheets before serving.

 

13. Crumbl German Chocolate Cookies

If you like coconut and chocolate together, these are well worth a try. They’re lovely with a cup of coffee and feel like a real treat without being difficult to make.

Ingredients:

  • 1 cup rolled oats
  • ½ cup unsweetened peanut butter
  • ¼ cup unsweetened apple sauce
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Place all the ingredients in a large mixing bowl and stir until well combined.

  3. Using gloved hands, roll about two tablespoons of dough into balls and place them on the prepared baking sheet. Gently flatten each ball with the back of a spoon or a fork.

  4. Bake for 10–12 minutes, or until the edges are lightly golden.

  5. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

21. Reese’s Pieces Oatmeal Cookies

The oats add a lovely chewy texture, and the Reese’s Pieces bring plenty of peanut butter and chocolate flavor. They’re the sort of cookies that go down really well with a hot cup of coffee.
