Festive Grinch S’mores Bars with White Chocolate and Marshmallow

Every year when Christmas rolls around, I can’t resist making a few playful treats that bring a smile to everyone’s face. These Festive Grinch S’mores Bars are one of my absolute favorites because they’re so simple to put together and they always get a big reaction. There’s just something about that bright green chocolate and the little red heart that instantly puts everyone in a festive mood. I love seeing kids’ eyes light up when they spot these on the dessert table.

What I enjoy most about this recipe is how it takes a classic flavor combination and gives it a fun holiday twist. You’ve got the creamy white chocolate, the gooey marshmallow center, and the crunch of graham crackers all wrapped up in a cheerful Grinch theme. It’s the kind of treat that feels special without needing hours in the kitchen, which is a win during the busy holiday season.

These bars are perfect for parties, bake sales, or even just a cozy afternoon at home with a mug of hot cocoa. I like to make a batch ahead of time and keep them chilled until we’re ready to serve. They hold up beautifully and look so cute on a platter. Trust me, they disappear fast, so you might want to make extra.

Ingredients

  • 10 oz Ghirardelli’s white chocolate wafers – This gives the bars a smooth, creamy coating that sets perfectly.

  • 4 graham crackers – These add that classic s’mores crunch everyone loves.

  • 2 tablespoon jet puffed marshmallow creme – This creates a soft, gooey center that holds everything together.

  • 2 red candy sprinkle hearts – A tiny detail that gives these treats their signature Grinch look.

  • 7 drops bright green food gel – This is what turns the white chocolate into that festive Grinchy green.

Recipe Instructions

You can find a printable recipe card at the bottom of this post.

1. Melt the chocolate wafers according to the package directions using the defrost setting on your microwave. (For example, heat for 2 minutes on defrost, stir, then heat for another 1 ½ minutes and stir again. If needed, heat for 1 more minute on defrost.)

2. Stir in the green gel food coloring until fully blended.

3. Spread marshmallow cream between two graham crackers to make a sandwich.

4. Spoon some of the green chocolate into the mold. Place the graham cracker sandwich on top, then cover with more chocolate. Freeze until set.

5. Transfer the remaining chocolate to a piping bag.

6. Remove the s’mores bars from the mold and drizzle with the chocolate.

7. Attach a red heart sprinkle using a dab of melted chocolate.

8. Let the bars dry completely before serving.

Serving & Storing

  • I like to serve these bars chilled because the chocolate has a nice snap and the marshmallow stays perfectly soft inside.

  • They look so cute on a Christmas dessert platter, especially if you mix them in with other holiday treats for a pop of bright green.

  • If you’re making them ahead of time, keep them in an airtight container in the fridge to maintain their shape and freshness.

  • They’ll stay fresh for about 4 to 5 days, which makes them great for prepping before a party.

  • You can also freeze them in a sealed container with parchment between the layers if you want to make a big batch early in the season. Just thaw in the fridge before serving.

Variations

  • Milk chocolate version – Swap the white chocolate for milk chocolate to give these a more classic s’mores flavor with a Grinchy twist.

  • Minty Grinch – Add a drop or two of peppermint extract to the melted chocolate for a refreshing holiday flavor.

  • Extra marshmallow – Spread a thicker layer of marshmallow creme for an even gooier center.

  • Holiday sprinkle mix – Decorate the tops with red, green, and white sprinkles for extra festive flair.

  • Mini s’mores bites – Cut the graham crackers into smaller pieces and make bite-sized treats that are perfect for party platters.

  • Dark chocolate drizzle – Add a contrasting drizzle of dark chocolate over the green coating for a pretty finish.

  • Stuffed with candy – Tuck a mini chocolate square or peppermint patty inside the marshmallow layer for a surprise in the middle.

  • Grinch on a stick – Insert a popsicle stick into each bar before chilling to turn them into easy grab-and-go treats.

Substitutions

  • White chocolate wafers → Use white chocolate chips or almond bark if that’s what you have on hand.

  • Graham crackers → Swap for digestive biscuits, shortbread, or vanilla wafers for a slightly different crunch.

  • Marshmallow creme → Regular marshmallows melted slightly will work in a pinch, just spread them quickly before they set.

  • Red candy hearts → Use red M&Ms, red jelly beans, or even a small dot of red icing if you can’t find heart sprinkles.

  • Green food gel → Regular liquid food coloring works too, though you might need a bit more to get that vibrant Grinch shade.

FAQs

Can I make these ahead of time?
Yes, these bars keep really well in the fridge for several days. I usually make them a day or two before a party and they’re just as tasty.

Do I need a special mold for this recipe?
No, you can use any silicone mold or even a parchment-lined baking dish. Just cut the bars into squares once they’ve set.

Can I use regular chocolate instead of white chocolate?
Absolutely. The flavor will be different, but it still works beautifully. Just keep in mind the green coloring won’t show up as well on dark chocolate.

How do I keep the chocolate from seizing when I melt it?
Use the defrost setting on your microwave and stir often. White chocolate can be a bit temperamental, so gentle heat is key.

Can these be frozen?
Yes, freeze them in a single layer first, then transfer to an airtight container with parchment between layers. Thaw in the fridge before serving.

What if I don’t have marshmallow creme?
You can melt regular marshmallows until soft and spreadable. Work quickly though, because they set faster than the creme.
