Ingredients

  • 1 1/2 cups of white rice – This fluffy white rice will form the perfect base for all the flavorful ingredients to come together.

  • 4 boneless skinless chicken breasts (diced) – The chicken adds protein and takes on all the delicious seasoning, making every bite juicy and tender.

  • 1/4 cup of lime juice – A zesty touch of lime juice to brighten up the flavors and give the dish a fresh, tangy kick.

  • 2 tablespoons of chopped cilantro – Fresh cilantro brings a burst of herbaceous flavor, elevating the entire dish.

  • 1 tsp paprika – Paprika adds a subtle smokiness and depth of flavor that complements the spices beautifully.

  • 1 tsp garlic salt – Garlic salt enhances the savory taste, bringing just the right amount of seasoning to the chicken.

  • 1 tsp cumin – Cumin gives the dish a warm, earthy flavor that pairs perfectly with the other spices.

  • 1 tsp chili powder – This adds a little heat and a lot of flavor, giving the dish a nice balance of spice.

  • 1 tsp onion powder – Onion powder adds a rich, savory note that enhances the overall taste of the chicken and rice.

  • 1/4 cup of vegetable oil – The oil helps cook the chicken to perfection, ensuring it gets a nice crispy exterior.

  • 12 oz bag of frozen corn – Sweet and slightly charred corn adds texture and a touch of sweetness to the dish.

  • 1 tbsp of butter – Butter gives the corn a rich, creamy finish, making it the perfect complement to the street corn sauce.

  • 1/2 cup of crumbled queso fresco (divided) – This creamy cheese adds a mild, slightly tangy flavor that really brings the dish together.

  • 1/3 cup of mayo – Mayo adds richness and creaminess to the street corn sauce, balancing out the spices.

Top Tips

  • Customize the Spice Level: Adjust the amount of chili powder and paprika based on your family’s spice tolerance. You can always add more for extra heat or reduce it for a milder flavor.

  • Use Fresh Corn: If you’re in season, fresh corn will add an even sweeter, juicier texture to the dish. Just be sure to grill or roast it until slightly charred for that street corn flavor.

  • Let the Chicken Rest: After cooking the chicken, let it rest for a few minutes before serving. This helps the juices redistribute, keeping the chicken tender and juicy.

  • Make it Ahead: You can prep the chicken and sauce ahead of time. Store them in the fridge until you’re ready to cook, making it a great meal for busy days.

  • Add Extra Veggies: Feel free to throw in some extra veggies like bell peppers, zucchini, or tomatoes to add color, flavor, and nutrients to the dish.

  • Try Different Rice: While white rice works perfectly, you can switch it up with brown rice, cauliflower rice for a low-carb option, or even quinoa for added protein.

  • Toppings Make it Special: Add a squeeze of fresh lime juice or a dollop of sour cream on top for extra creaminess and brightness.

  • Save the Leftovers: This dish tastes just as good the next day! Store leftovers in an airtight container and reheat for a quick lunch or dinner.

  • Experiment with Cheese: If you can’t find queso fresco, try crumbled feta or cotija cheese for a similar creamy, salty finish.

  • Don’t Skip the Char: Getting a little char on the corn is key to unlocking that smoky street corn flavor. Be sure to let it brown slightly for the best results!

My Favorite Ways to Enjoy Street Corn Chicken and Rice

  • Topped with Avocado: Add creamy slices of avocado on top for extra richness and texture. It’s the perfect complement to the flavorful spices in the dish.

  • With a Side of Crispy Tortilla Chips: Serve it with a handful of crispy tortilla chips on the side for some crunch. They’re perfect for dipping into the street corn sauce!

  • Wrap it in a Tortilla: Turn this dish into a wrap by spooning the chicken, rice, and street corn sauce into a warm flour or corn tortilla. It’s a great handheld option for lunch or dinner.

  • Add a Fried Egg on Top: For extra protein and richness, top your bowl with a fried egg. The runny yolk adds a delicious creaminess to the whole dish.

  • With a Side of Grilled Veggies: Pair it with a side of grilled veggies, such as bell peppers, zucchini, or asparagus, to balance the flavors and add more color to the plate.

  • Spicy Sriracha Drizzle: If you love spice, drizzle some sriracha over the top for an added kick. It pairs perfectly with the creamy street corn sauce.

  • Add a Scoop of Sour Cream: A dollop of sour cream on top can mellow out the spices and add a cool, creamy contrast to the dish.

  • Make it a Salad: Turn this into a salad by serving the rice and chicken over a bed of fresh greens like spinach or romaine lettuce. It’s a lighter way to enjoy the dish.

  • With a Side of Pickled Jalapeños: For those who like a little heat, serve your meal with pickled jalapeños on the side. They add a tangy, spicy bite that complements the flavors of the dish.

  • For Meal Prep: This dish is perfect for meal prep! Prepare a big batch and store it in individual containers for quick, flavorful lunches throughout the week.
