I’m a massive fan of the slow cooker at the moment. As a family of five, evenings are usually the most hectic time of our day. My husband gets home at around 6:30, I work evenings, and we have three children to get to clubs, feed and bathe. Busy busy! I’m always conscious that we need to eat a well-rounded diet and I don’t like to heavily rely on processed, frozen food on busy nights. As well as not being nutritious, they’re also often a much more expensive alternative! That’s why I love recipes that I can just throw together before I start work after the morning school run. Bish, bash, bosh, job done! This slow cooker beef casserole & dumplings recipe is delicious, nutritious and so easy!
Slow Cooker Beef Casserole & Dumplings Recipe
This is so simple yet absolutely delicious!
- 400g diced beef
- 5 medium potatoes
- 5 medium carrots
- 2 sticks celery
- 3 medium onions
- 500ml beef stock
- 3 cloves garlic
- 2 tablespoons dried thyme
- One splash worcestershire sauce
- Cornflour if required
- 125g self-raising flour
- 60g suet
You’ll also need a slow cooker big enough to feed your family. We’ve had ours for a few years and after loads and loads of uses it’s still in pretty good nick! I’ve found some fab ones here.
How to cook
Chop the potatoes, carrots, onions and celery. Crush the garlic. Add all of the casserole ingredients to the slow cooker. Cover and cook on the high setting for 5 hours.
Then, mix together your self-raising flour and suet with 100ml cold water. Form small, walnut sized balls with the dough and add to the slow cooker.
Stick the lid back on and cook for a further hour. Yum yum!
