I’m a huge fan of using the slow cooker, particularly as the colder weather and the darker nights draw in. Although I work from home, life is pretty hectic most days and having the evening meal ready and prepared really just take away a lot of the stress when everyone is hungry and tired at the end of the day. My job involves working a morning shift and an evening shift so the last thing I want to be doing is rushing around preparing food, shovelling it down and then rushing to start work. It’s much less stressful and much more relaxed when the meal is ready and waiting for us.
I’m trying to increase the variety of meals that I cook in the slow cooker at the moment. I got some inspiration a little while ago from some other bloggers who kindly shared their delicious slow cooker meal ideas. Chilli is always a winner in our house, particularly around halloween and bonfire night when we want something warm to tuck into after being out in the cold.
Slow Cooker Beef Chilli Con Carne
- Minced beef
- 2x onions
- 1x red pepper
- 1 tin chilli beans (normal kidney beans will work just as well)
- 2 teaspoons chilli powder (we use mild as the children don’t like it too hot)
- 2 teaspoons cumin
- 1 tin chopped tomatoes/passata
- 2 tablespoons tomato puree
- 2 cloves garlic
- Cornflour if needed to thicken
The beauty with this recipe is that you can add extra veg if you like or leave out any bits you don’t like. I’ll admit I’m not a huge fan of kidney beans so if I had my choice I’d leave them out!
You’ll also need a slow cooker big enough to feed your family. We’ve had ours for a few years and after loads and loads of uses it’s still in pretty good nick! I’ve found some fab ones here.
Chop your onions and peppers (and any other veg you’re using) into small chunks.
If you like, you can brown off your mince beforehand. I usually wouldn’t bother when I’m throwing it all into the slow cooker in the morning, however on this occasion I had to wait for my online food shop to arrive before I could make a start. I did brown the mince off and soften the onions and pepper before throwing it all into the slow cooker. You can just chuck the lot in raw though and let it cook slowly throughout the day.
I’d usually put ours on high for half an hour then turn it down to low for the rest of the day. That’s when I’m cooking early in the morning and we want to eat at around 6ish. You’ll need to follow the instructions for your particular slow cooker.
Check the slow cooker about half an hour before you want to eat. If you feel that the sauce needs thickening then you can mix in some cornflour. I tend to find that this recipe works well without though as I don’t use stock.
The finished product
It’s traditional to eat chilli con carne with rice. However if your family is anywhere near as fussy as mine then you might improvise this a little! For my husband, eldest son and myself, we’ll have rice and garlic bread. For our daughter and youngest son it’ll be pasta! I love to have a little grated cheese on mine and some sour cream. If there are any leftovers, then I’ll serve it up tomorrow with a jacket potato, perfect comfort food!
