There’s something about cold winter days that makes a sandwich or salad straight from the fridge seem a lot less appealing. I’m much more likely to want something warm for lunch, even if it’s just a bowl of soup with some crusty bread.
If you’re the same, there are loads of ideas here. I’ve included plenty of soups, but there are also sliders, quesadillas, flatbreads, rice bowls, toasted sandwiches and a few other bits thrown in too.

Ingredients:
- 1/2 lb. deli sliced pastrami
- 1/2 lb. deli sliced corned beef
- 2 tbsp. vegetable oil
- 1/2 medium onion, sliced
- 6 slices swiss cheese
- 1 1/2 (16 oz.) bags of coleslaw mix
- 1 1/2 cups saurkraut
- Italian dressing for topping
- Green onions for topping
Instructions:
- Heat the vegetable oil in a large skillet over medium heat.
- Add the onion and cook for 2–3 minutes, until it starts to become translucent.
- Add the coleslaw mix and cook for another 2–3 minutes, stirring frequently.
- Roughly chop the sliced meat into smaller pieces.
- Add the sauerkraut and chopped meat to the skillet and stir everything together.
- Cook for another 2–3 minutes, until everything is heated through and the coleslaw mix is cooked to your liking.
- Add the sliced Swiss cheese, reduce the heat to low, and cover the skillet with a lid. Cook until the cheese has melted.
- Spoon into bowls, drizzle with Italian dressing, and sprinkle with sliced green onions before serving.

- 1/4 cup butter, softened
- 1 teaspoon garlic powder

- 1 package Hawaiian rolls
- 9 slices American cheese, cut into six pieces
Instructions:
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Stir together the butter, garlic, and parsley until well blended.
- Cut each Hawaiian roll into three equal pieces.
- Spread the butter mixture on one side of each piece of bread.
- Place half the bread slices butter side down on the prepared baking sheet.
- Top each slice with a piece of cheese.
- Place the remaining bread slices on top of the cheese with the butter side facing up.
- Bake the sandwiches for 20 minutes, flipping halfway through the cook time.

Ingredients:
- 1 (13–16 ounce) tube refrigerated pizza dough
- 1/2 cup pizza sauce
- 2 cups shredded mozzarella cheese
- 4 ounces sliced pepperoni
- 1/2 cup whole milk ricotta cheese
- Fresh basil leaves, for garnish
- 2–3 tablespoons hot honey, for drizzling
- 1 tablespoon olive oil (for the pan)
Instructions:
- Preheat the oven to 375°F. Lightly grease a 9×13-inch rectangular baking pan with olive oil.
- Press the refrigerated pizza dough evenly into the prepared pan, gently stretching it to the corners. If the dough springs back, allow it to rest for 5–10 minutes before continuing.
- For a thicker, fluffier crust, cover the dough and let it rise in the pan for 30–60 minutes before adding toppings.
- Spread the pizza sauce evenly over the dough, leaving a small border around the edges.
- Sprinkle the mozzarella cheese evenly over the sauce. Arrange the pepperoni slices across the top of the cheese.
- Bake for 17–20 minutes, or until the crust is golden brown, the cheese is melted, and the pepperoni edges begin to crisp.
- Remove the pizza from the oven and then add spoonfuls of ricotta cheese across the surface of the pizza. Scatter fresh basil leaves over the top.
- Finish with a generous drizzle of hot honey over the entire pizza before slicing and serving.

Nachos for lunch are always a good idea as far as I’m concerned. The chicken cooks away in the slow cooker, then you just need plenty of chips, cheese and your favorite toppings.

Ingredients:
- 1 lb ground chicken
- 1 cup blanched broccoli florets
- 1 egg
- 1 onion, chopped
- 2 tbsp olive oil
- 1/2 tsp granulated garlic
- 1/4 tsp black pepper
- 1/2 tsp salt
Instructions:

Add the ground chicken, egg, salt, spices, and finely chopped onion to a bowl.

Finely chop the broccoli and stir it into the mixture.

Mix well until all the ingredients are evenly combined and form a uniform mixture.

Heat the olive oil in a skillet over medium heat. Scoop the mixture by the tablespoon and gently shape it into small patties.

Place the patties in the skillet and cook for 4–5 minutes on one side. Flip, cover the pan with a lid, and cook for another 4 minutes until cooked through.

Transfer the patties to a paper towel-lined plate and let them rest for 4–5 minutes to absorb any excess oil. Serve with your favorite sauce and fresh herbs.

I could quite happily eat a plate of these for lunch. They’re filled with sausage and cream cheese, wrapped in pastry and baked until golden.
