  7. Transfer the potato mixture into a Ziplock bag, flatten it with a rolling pin, and freeze for about 1 hour.

  8. Carefully cut open the Ziplock bag to release the flattened potato mixture in one piece.

  9. Slice the mixture in half, then cut into smaller sticks.

  10. Heat at least 1 inch of oil in a pan until it reaches 350°F.

  11. Fry the potato sticks in batches for 2–3 minutes, making sure not to overcrowd the pan.

  12. Transfer the fried sticks to a plate lined with paper towels to absorb excess oil.

  13. Serve hot with your favorite dipping sauce.

For Frying:

  • Vegetable or canola oil for frying

Instructions:

  1. In a large bowl, mix the mashed potatoes, Parmesan, garlic, egg, chives, salt, and pepper until smooth.

  2. Scoop out about 1 tablespoon of the mixture at a time and roll into balls. Place them on a lined tray or plate.

  3. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Italian seasoning, garlic powder, paprika, salt, and pepper.
