Flavor-Packed Roasted Cranberry Chicken Thighs with Garlic & Herbs
When cranberries start popping up in the shops, I can’t resist finding ways to use them beyond the usual sauces and bakes. That’s how these roasted cranberry chicken thighs came to be. They’ve got that irresistible mix of sweet, tart, and savory that feels so cozy and festive. Plus, I love how the cranberries burst in the oven, creating a tangy glaze that makes the chicken extra juicy and flavorful.
This dish is one of my favorite ways to dress up chicken thighs without adding a lot of fuss. A quick rub with garlic, paprika, and herbs gives the meat so much depth, while the cranberries, lemon, and rosemary do the rest of the magic in the oven. The whole kitchen fills with the most incredible aroma, and by the time the timer goes off, you’ve got a dinner that looks and tastes like something you’d serve for a special occasion.
The best part is how versatile it is. I’ve served these cranberry chicken thighs with creamy mashed potatoes, fluffy rice, and even alongside stuffing when I wanted to keep things festive. It’s a dish that feels comforting on a weeknight but also fancy enough for the holidays. Honestly, once you try it, you’ll want to keep it on repeat all season long.

Ingredients
-
1 cup of cranberries – I love how the tart cranberries burst and caramelize in the oven, adding the perfect pop of flavor.
-
2 tbsp of white wine vinegar – A little vinegar helps balance the sweetness and gives the dish a subtle tang.
-
1/3 cup of brown sugar – Brown sugar melts into a rich glaze that pairs so well with the cranberries.
-
6 bone-in, skin-on chicken thighs – Juicy, golden chicken thighs are the star of this recipe.
-
2 tsp of paprika – Paprika adds warmth and a hint of smokiness to the seasoning.
-
1 tsp pepper – A touch of black pepper brings just the right amount of bite.
-
1 tsp salt – Salt ties all the flavors together and makes everything taste brighter.
-
6 garlic cloves (minced) – Garlic gives the chicken that irresistible savory kick.
-
1/4 cup of olive oil – Olive oil keeps the chicken moist while helping the seasoning stick.
-
1 yellow onion (sliced) – Onions roast until tender and sweet, adding another layer of flavor.
-
1 lemon (sliced) – Lemon slices bring a fresh citrusy zing that balances the richness.
-
3–4 rosemary sprigs – Rosemary infuses the dish with that cozy, herby aroma I can’t get enough of.
-
1/2 cup of chicken broth – A splash of broth keeps everything juicy and helps create a flavorful sauce.

1. Preheat your oven to 425°F (220°C) and set a baking dish aside. In a small bowl, combine the cranberries, white wine vinegar, and brown sugar. Stir until the cranberries are fully coated and set aside.

Rub this mixture evenly over the chicken thighs, then arrange them in the prepared baking dish. Scatter the sliced onions on top.

My Favorite Ways to Enjoy Roasted Cranberry Chicken Thighs
-
I love serving this with creamy mashed potatoes so the tangy cranberry glaze can soak right in.
-
Sometimes I pair it with wild rice or couscous, which really highlights the sweet and savory flavors.
-
If I’m in a cozy mood, I’ll make a side of roasted root veggies. Carrots and parsnips taste amazing with the cranberry sauce.
-
Around the holidays, I like to serve it alongside stuffing to make the whole meal feel extra festive.
-
Leftovers are incredible shredded up and tucked into a warm sandwich or wrap the next day.
-
I’ve even added the chicken (and a bit of the sauce) to a salad with mixed greens, goat cheese, and candied pecans, it’s so good!

Serving & Storing
-
I like to bring this dish straight to the table in the baking dish, it looks rustic and inviting with the cranberries and rosemary on top.
-
A simple green salad or some roasted veggies make the perfect side if you want to keep things light.
-
For a holiday table, I love pairing it with stuffing and a basket of warm rolls so everyone can mop up that cranberry sauce.
-
Leftovers keep really well in the fridge for about 3 days, and the flavors get even deeper the next day.
-
To reheat, I usually pop the chicken back in the oven at 350°F until warmed through so the skin crisps up again.
-
If you want to freeze it, just remove the chicken from the bones first, store it with the sauce in an airtight container, and it’ll keep for up to 2 months.

Variations
-
Sometimes I swap the chicken thighs for drumsticks or even chicken breasts, just keep an eye on the cook time so they don’t dry out.
-
If I’m out of fresh cranberries, I’ll use frozen ones straight from the bag (no need to thaw first).
-
A drizzle of balsamic vinegar instead of white wine vinegar gives the sauce a deeper, richer flavor.
-
You can play with the herbs. Thyme or sage work beautifully if you don’t have rosemary on hand.
-
For a spicier kick, I’ll sprinkle in a pinch of chili flakes or cayenne with the seasoning rub.
-
If I’m feeding a crowd, I’ll double the cranberry mixture and spoon extra over the chicken as it roasts, it makes the sauce extra luscious.

Substitutions
-
If you don’t have fresh cranberries, frozen ones work just as well, you can toss them in straight from the freezer.
-
No white wine vinegar? Apple cider vinegar or even a squeeze of fresh lemon juice will give you that same tangy balance.
-
Brown sugar can easily be swapped with honey or maple syrup for a different kind of sweetness.
-
If chicken thighs aren’t your thing, chicken drumsticks or even bone-in breasts will roast up beautifully.
-
Olive oil can be swapped for avocado oil or melted butter if that’s what you’ve got on hand.
-
Not a fan of rosemary? Try thyme or sage instead, they both bring that cozy, herby flavor.

FAQs
Can I use boneless, skinless chicken thighs?
Yes! They’ll cook a bit faster since there’s no bone, but you won’t get quite as much crispy skin. Just check for doneness around the 25–30 minute mark.
Do I need to sear the chicken before roasting?
Nope, the high oven temperature does all the work for you. The skin crisps up beautifully without the extra step.
Can I make this ahead of time?
Absolutely. You can prep the cranberry mixture and season the chicken a day in advance. When you’re ready to cook, just assemble everything in the baking dish and pop it in the oven.
What sides go best with this dish?
I love it with mashed potatoes, rice, or roasted veggies. For a holiday vibe, it pairs perfectly with stuffing and green beans.
How do I store leftovers?
Leftovers keep in the fridge for up to 3 days, and they reheat really well in the oven. You can also freeze the chicken (with sauce) for up to 2 months.
