Fall is definitely the time of year when I start wanting all the cozy snacks. Give me anything with pumpkin, apple, cinnamon or maple and I’m happy, especially once the weather starts cooling down.

I’ve pulled together some of my favorite fall snacks here, with plenty of sweet treats as well as a few savory options too. There are dips, muffins, cookies, sliders, snack mixes and lots of things you can easily grab with your hands.

These would be great for Halloween parties, game day, after-school snacks or a cozy movie night at home. Or, if you’re anything like me, you really don’t need an occasion to make a good snack!

Servings: 6

Ingredients: 

  • 6 sheets of phyllo dough
  • 200 g pumpkin, peeled and cut into small cubes
  • 100 g feta cheese, crumbled
  • 1 cup baby spinach, finely chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp honey (optional)
  • 2-3 tbsp melted butter (for brushing the phyllo dough)
  • Pumpkin seeds or sesame seeds for garnish (optional)

Instructions: 

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tbsp of olive oil and sauté the pumpkin cubes until tender, about 5-7 minutes. Season with salt, pepper, and honey (if using), and stir.
  3. Add the baby spinach and cook for another 1-2 minutes, until wilted. Turn off the heat and add the crumbled feta cheese. Gently mix the filling.
  4. Cut the phyllo dough sheets into squares (about 10×10 cm each). Brush each square with melted butter.
  5. Stack three squares on top of each other, rotating them slightly to form a star shape. Press the stacked squares into a muffin tin, shaping them into cups.
  6. Fill each phyllo cup with the pumpkin, spinach, and feta filling.
  7. For extra texture, sprinkle pumpkin seeds or sesame seeds on top if desired.

Caramel and popcorn are made for each other, especially once the cooler weather rolls around. I love making a big batch to have while we’re watching a movie at home.

Servings: 8

Ingredients:

  • 8 cups popcorn, popped
  • 1 cup unsalted butter
  • 1 ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • ¾ teaspoon baking soda

Instructions:

  1. Pop the popcorn using an air popper or on the stovetop, then transfer it to a large mixing bowl. Remove any unpopped kernels and set aside.
  2. Line two 9×11-inch baking sheets with parchment paper and set them aside.
  3. Melt the butter in a large heavy-bottomed saucepan over medium heat. Stir in the brown sugar and bring the mixture to a gentle boil. Once boiling, let it cook for 4–5 minutes without stirring, allowing the sugar to fully dissolve and the caramel to thicken.
  4. Remove the pan from the heat and carefully stir in the vanilla extract, salt, and baking soda. The mixture will bubble up, so stir slowly until everything is combined.
  5. Pour the hot caramel over the popcorn and gently toss until every piece is evenly coated.
  6. Divide the coated popcorn between the prepared baking sheets, spreading it into an even layer.
  7. Bake at 250°F (120°C) for 1 hour, stirring every 15 minutes to help the caramel coat the popcorn evenly and crisp up.
  8. Remove the baking sheets from the oven and allow the popcorn to cool completely. As it cools, the caramel will harden and become crunchy.
  9. Once fully cooled, break the popcorn into pieces and serve. Store any leftovers in an airtight container for up to 1 week.

39. Zucchini Chocolate Chip Cookies

I always like finding ways to use zucchini when there’s loads of it around at this time of year. Add chocolate chips and suddenly getting some veggies into a cookie doesn’t sound bad at all!
